Yes yes I know it's cheating. These Baked Chicken Kabobs are baked not grilled and not fried. Psst they are healthier and delicious no one will ever know! Check out this marinade I make, then freeze it until I need it for a quick dinner or perfect for get together with family and friends! Tender juicy chicken and a great finger food for any party!

Seriously easy to feed a crowd!





This is the perfect solution to feeding a large crowd and not standing over a hot grill.




I always fool everyone by baking a huge pan of cut up marinated chicken, then thread them onto kabobs.




I serve an assortment of dipping sauces in individual serving dishes when I make these for guests.

Don't be afraid to cook too much!





I make a large pan sometimes eight chicken breasts cut into cubes.



This chicken is fabulous for leftover chicken salads or just on top of a great garden salad.



It won't got to waste since you can change it up with different sauces on top.



We love hot sauce and blue cheese or honey mustard.




The most ask for at our parties is our Jack Daniels sauce or our Hot Sauce.

Of Course You Can Still Marinate and Grill!





Even though these are a baked version skewer kabob, you can still use this great marinade and grill them if you prefer.




You could also use any kind of meat you prefer, chicken, lamb, beef, deer meat. The marinade is universal!




If you decide you want to use vegetables in your skewers and not just meat, then use grape tomatoes, any cooked vegetables to the threaded skewers and you can use other raw vegetables like peppers.




We like steamed zucchini, broccoli and carrots wedges, all steams and soft and then threaded to the skewers for a great little kabob!

Baked Chicken Kabobs

prep time: 10 minscook time: 45 minstotal time: 55 mins

ingredients:

Marinade Recipe:

2 cloves garlic, chopped
4 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 tablespoon fresh chopped basil
1/2 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon rosemary
3 tablespoons lemon juice
1 tablespoon lime juice
1/8 teaspoon pepper
1 1/2 pounds boneless chicken breast meat or pork cut into cubes

instructions:


I marinate the  chicken and add to a freezer bag. When ready to use I take it out the night before and thaw in the refrigerator. It's all ready to bake and then I spear the chicken after it's cooked and make baked kabobs! If you want grill marks to really fool them use a cast iron grilling skillet and bake them in it for that charred look.




Place all ingredients a freezer zip lock bag and marinade for 3 to 4 hours or freeze until ready to use.
When you are ready to use, place on a deep cookie sheet lined with parchment or 13x9 baking pan.
Juice and all bake at 400 degrees around 25 minutes until juices run clear in the chicke.

Cool thread with short skewers or just toothpicks as an appetizer.
Terrific dipped in orange marmalade or even marinara sauce.
