Baked French Toast Cupcakes

Baked French Toast Cups little miniature French toast cups made in a cupcake tin and a perfect breakfast with apples and cinnamon
Prep time: 10 MinCook time: 23 MinTotal time: 33 Min

Ingredients

  • around 6 slices broken up and enough day-old bread cut into pieces to fit cupcake tins
  • 3 eggs
  • 1/2 cup regular whole milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon of vanilla extract
  • 3 teaspoons sugar or sugar substitute
  • fruit of choice suggestions: sliced apples, sliced peaches, blueberries, berries of any kind, mango, cherries or sliced bananas

Instructions

  1. Grease a cupcake tin and preheat the oven to 350 degrees.
  2. Add the bread pieces to fit each cupcake space.
  3. Place the fruit on top.
  4. In a bowl whisk together 3 eggs, sugar, coconut milk, vanilla, and cinnamon until well blended.
  5. Pour into each tin to cover the bread. Bake at 350 until browned around 25 minutes.
  6. Serve with warmed maple syrup. Makes 12.
