Pancake Breakfast Casserole is the perfect all-in-one pan breakfast with so many possibilities.

This sheet pan breakfast casserole is great even for a quick weeknight or weekend meal when you're in a hurry.

The casserole can even be made ahead and taste great reheated and if you prefer homemade pancake batter try my recipe.

I love the different combinations we have tried but the apple crumb topping with cooked breakfast sausage and crispy crumbled bacon is still our favorite pancake meal!

Just think about how easy having the meat, a favorite fruit, or a delicious cinnamon topping baked onto a cake-like pancake done in no time using a mix.

Prepare it the night before to bake it in the morning or freeze it for the easiest breakfast to feed a crowd and you can even make this in a cupcake tin for individual servings for a grab-and-go!

This can be served with pureed fruit, maple syrup, whipped cream, or just dusted with powdered sugar.

Easy Quick and Delicious


It's perfect for weekends especially if you have visitors like we do here in Florida that spend a few days.

I really like an all-in-one breakfast. No standing over the stove flipping pancakes.

The batter is perfect, and the topping can be adapted to whatever the family or guests will like just by setting up a breakfast bar it will take out all the guesswork that they like and build their own breakfast!

I have several suggestions below, for different combinations.



Shopping List:


  1. all-purpose biscuit, pancake, or waffle baking mix
  2. cinnamon nutmeg, allspice, pumpkin spice, or ginger 
  3. water
  4. eggs
  5. any kind of fully cooked meats (IE: breakfast sausage, bacon, deli meats, etc.)
  6. fruits of choice: sliced apples, bananas, or berries




Tips for making Pancake Casserole


  • Use pre-cooked sausage and bacon for faster cooking instead of cooking separately
  • Always oil spray the pan for easy release or line it with parchment paper
  • Made from scratch pancake batter is great to use
  • Any fruits work great whatever you like sliced up
  • Any baking mix, pancake mix, or waffle mix will work fine you can even use Jiffy or Bisquick just adding the same recipe ingredients 
  • Experiment with spices like pumpkin spice, nutmeg, ginger, etc.
  • Use other toppings like strawberry jams warmed up or ice cream toppings
  • Sprinkle with nuts, coconut, or any kind of fresh fruit, and set up a breakfast bar to add their own toppings
  • Make puree fruits instead of syrup and top with whipped cream

Cooked Meat Toppings

  1. bacon, pork breakfast sausages
  2. Italian sausage patties
  3. Canadian bacon
  4. Boneless pork chops
  5. Ham or ham steak chopped
  6. Boneless deli meat of your choice(ham works the best)




Topping Suggestions

  • sliced bananas, apples, pears
  • berries of any kind IE raspberries, blueberries, blackberries, boysenberries, strawberries sliced
  • mango diced or papaya
  • coconut
  • chocolate chips
  • macadamia nuts, pistachios, walnuts pecans
  • whipped cream
  • maple syrup
  • powdered sugar
  • butter
  • jams warmed
  • pureed fruits




Pancake Combinations


  • A combination of pineapple, mango, and coconut for a tropical treat and try some coconut syrup on top sprinkled with macadamia nuts
  • Craisins, raisins, apricots, figs, and dates, or in combination go great in this pancake breakfast.
  • spices will make a new change to the batter flavor using a combination or just cinnamon
  • Mix and match flavored extract, lemon and lemon zest, or orange, and orange zest
  • Of course, a favorite for the kids is adding some chocolate chips in the batter.
  • banana, coconut, the meat of choice, and chocolate syrup
  • Get creative and make a combination of whatever you prefer for a Hawaiian Island-style breakfast try some  kiwi, mango, and papaya, and add some coconut, coconut syrup, and macadamia nuts

These breakfast-style casseroles are the easiest way to get everything all served at once without all the fuss.


Precooked meats, packaged biscuit mixes or pancake mix, waffle mix whatever you have can be transformed into the easiest of all breakfasts to feed a large family, guests, and hungry family.


One other tip, for those who aren't fruit lovers, slice them and make a breakfast bar, just serve the cooked meats and a tray of sliced fruits, and topping on the side easy peasy.

This is a sheet pan pancake breakfast with a combination of meats, fruits then add your favorite garnishes.

Ingredients

  • 2 cups all-purpose biscuit, pancake, or waffle baking mix or make my recipe for pancakes
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg, allspice, pumpkin spice, or ginger
  • 1 cup milk or water
  • 2 eggs
  • The recipe can be doubled and see notes for suggestions and additions
  • see the crumb topping recipe at the end
  • Meats Suggestions: fully cooked meats: breakfast sausages pre-made or fried ahead, bacon, Canadian bacon, Italian sausage, deli ham, boneless cooked pork chops, steak ( or whatever else you like)
  • fruits of choice
  • Garnishes: whipped cream, maple syrup, coconut syrup, warmed jams, pureed fruits, nuts, coconut, chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 9 x9 inch square pan (or if doubling the recipes a 13 x 9 pan) with parchment paper or use an oil spray.
  3. 2 cups fruits of choice:
  4. Mix the biscuit mix in a large bowl with eggs, milk, or water, and add some of the spices just until blended.
  5. Note: any pancake or waffle mix works with this recipe
  6. This batter will be lumpy and thick.
  7. Spread batter in a prepared pan.
  8. Place the fruit on top of the batter, then the meat you using (and for apple and sausage combinations the crumb topping)
  9. Note: you can set up a breakfast bar and serve the meats and sliced fruits separately instead of baking them if you prefer for folks who have allergies or are fussy.
  10. Bake at 350 for 30 to 35 minutes or till brown using the toothpick method in the center to ensure it's done. Serve warm with maple or various flavored syrups. warm jams or whipped cream
  11. Notes: 
  12. Use any kind of meat cooked, bacon, sausage, ham, steak, chicken, etc.
  13. Use any fruits you prefer: sliced bananas, apples, pears, berries of any kind IE raspberries, blueberries, blackberries, boysenberries, strawberries sliced, mango diced or papaya
  14. Toppings can be syrup, butter, jams, pureed fruits, whipped cream, nuts, coconut, fresh fruits, dried fruits
  15. Optional Topping for Batter: 
  16. Crumble Topping Recipe ( to be added to the top before baking):
  17. 1/3 cup brown sugar, packed
  18. 1 teaspoon or more to the taste of ground cinnamon
  19. 2 tablespoons softened butter
  20. 1/2 cup all-purpose flour
  21. Mix all ingredients in a bowl and add to the top of the raw batter before baking.
