No-Bake Pies

I have to admit I still love my graham cracker crust made from scratch and baked for a few minutes for a crunchy bite so I will leave it up to you for store-bought or homemade with the recipe I use included below.

If you really want to change this up a little you can also use crushed vanilla wafers, shortbread cookies, or even another cookie crust you like.

Don't worry if you're not a pineapple fan check the other fruit pies we've tried with this recipe and other options below.

This is a delicious fluffy pineapple no-bake cream cheese pie. A refreshing creamy pie perfect in the warmer weather and any fruits can be substituted.

Ingredients

  • 1 - 8 ounce package of cream cheese softened
  • 1/2 cup sugar or substitute sugar-free substitutes to taste
  • 3 cups of sweetened whipped heavy cream or use 1 - 8 ounce tub of whipped topping thawed (sugar-free can use also)
  • NOTE: you will need 1 1/2 cups of heavy cream whipped as it doubles in volume
  • 20 ounce can of crushed pineapple drained see notes below
  • 1 graham cracker crust store-bought or homemade
  • Optional Fruits To Use:
  • chopped canned peaches drained
  • chopped mango
  • chopped papaya
  • chopped canned drained mandarin oranges
  • canned chopped and drained cherries
  • canned and drained blueberries

Instructions

  1. Drain the pineapple in a strainer squeezing all the juice out and pat dry with paper towels.
  2. In a large bowl beat the sugar and cream cheese with an electric mixer until smooth.
  3. Add drained and strained crushed pineapple.
  4. Fold in the whipped cream or topping.
  5. Pile into the graham cracker crust and chill until set.
  6. Instructions on how to make Homemade Graham Cracker Crust:
  7. 1 sleeve of graham crackers put through a food processor making fine crumbs
  8. 4 tablespoons softened butter
  9. pinch of cinnamon
  10. 3 tablespoons of sugar
  11. Mix together.
  12. Lightly oil spray a 9-inch pie plate.
  13. Press into a pie plate, I prefer to bake this for 8 minutes at 350 degrees.
  14. Note you can also use shortbread or butter cookies, nilla wafers crushed instead of graham crackers.
  15. Instructions if using Heavy Cream whipped:
  16. Using a chilled bowl, whip 1 -1/2 cups of heavy cream with an electric mixer with 2 tablespoons of sugar or to taste, until stiff peaks form this will double in volume to 3 cups.
