These delicious can be a little tricky to blend but with my step-by-step photos this decadent fun cookie will come out perfect.

Brookies Are a Conversation Cookie



Honestly, I've probably made this cookie brookie since the 1970s just calling them a layered brownie cookie I am sure there are many names for these out there.


We have made all kinds of layered brownies over the years layered with peanut butter or even stuffed with oreo's and peanut butter layered brownies.


All these recipes are basic and can be adapted with a favorite addition or even a favorite cookie you like, so don't stop at this recipe with chocolate chips, the skies are the limit.


Either way, it's a win-win pair together no matter who you bake these for whether you love Chocolate Chip Cookies or Brownies, this is a special treat.

Ingredients Used to Make Brookie Cookies Or Bars

  • Chocolate Chip Cookie Dough

  • light brown sugar

  • white sugar
  • butter, melted

Cookie Dough Additions:

  • White chocolate chips
  • Toffee bars or another favorite candy bar you prefer
  • Candy-coated chocolates
  • Coconut candy bar (such as Almond Joy, chopped)
  • Trail mix
  • Dried cranberries
  • Dried fruits (chopped)
  • Pistachios (chopped) another kind of nut you prefer or sunflower seeds for nut allergies
  • Orange zest
  • Mini marshmallows
  • Peanut butter pretzels(chopped)
  • Honey-roasted peanuts (chopped)
  • Bacon! (cooked and chopped)
  • Potato chips (crushed)
  • Oatmeal
  • Fruity or regular rice cereal

Here is a delicious combination of two classics, brownies and cookies. The recipe will allow you to make cookies or squares from scratch or mixes.

Ingredients

  • Brownie Batter:
  • 1/2 cup flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa
  • 1/2 cup butter melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 3/4 cup chocolate chips
  • Chocolate Chip Cookie Batter:
  • 1/2 cup butter softened
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/3 cup all-purpose flour
  • 1 1/2 cups semi-sweet or milk chocolate chips more for decorating

Instructions

  1. Brownies:
  2. Beat the sugar and eggs together until light in color.
  3. Add all the rest of the ingredients until blended by hand and set aside.
  4. Prepare a brownie pan with grease or parchment paper and set aside
  5. Chocolate Chip Cookie Dough Instructions:
  6. Cream the butter and sugar until light around 3 minutes.
  7. Add all the rest of the ingredients except the chocolate chips, those just need to be folded in after the mixture is blended together.
  8. I like to refrigerate this dough for 1/2 hour before putting it together.
  9. Layer for a sheet pan with brownie batter on the bottom of a lined brownie pan with parchment paper.
  10. Then drop the cookie dough on top.
  11. Note: it's ok if it doesn't cover completely.
  12. Bake at 350 degrees for around 40 minutes.
  13. Cool completely before cutting them.
  14. Cookies:
  15. If making cookies, line a cookie sheet. with parchment paper.
  16. To make the half and half use a small, teaspoon or melon ball scoop and place each kind of dough, side by side and pinch the colors together molding them in a half-moon style form.
  17. Bake them in the oven for 10 minutes, until they are lightly brown and set around the edges. 
  18. I press a few extra chocolate chips into the tops of each cookie as soon as they come out of the oven.
  19. An alternative using mixes: 
  20. use a brownie and chocolate chip cookie mix to package instructions and follow the same instructions for molding and baking.
