We try and refrain from using words like "best soup ever" It's all a matter of your own taste buds, however, I am here to say, this is the best soup I have ever tasted or made.

This soup is loaded with sharp cheddar, a blend of spices, rich broth, and then topped with bacon and more cheese, and you can even choose from many more suggestions we listed below.

Easy Cheddar Cheese and Bacon Soup

Cheddar Cheese and Bacon Soup

This is a delicious creamy cheddar cheese and bacon soup. Pure comfort food bursting with flavors.

Ingredients

  • 4 tablespoons of unsalted butter (I use an Irish style butter)
  • 2 tablespoons of all-purpose flour
  • 1 teaspoon granulated garlic powder
  • 2 cups of heavy cream or half-and-half
  • 2 cups of low-sodium chicken broth (for a beer soup add Stout Beer in it's place)
  • 1 teaspoon Worcestershire sauce
  • salt to taste
  • white pepper to taste
  • 6 cups of grated off-the-block sharp cheddar cheese (saving 1 cup for garnishing the top of each bowl)
  • 1/2 cup of crumbled crispy fried bacon (drained with no oil)
  • Optional: 2 tablespoons of Tabasco or hot sauce
  • Garnish: 1 tablespoon of fresh chopped parsley, 1 tablespoon chopped green onions

Instructions

  1. In a deep soup pan, add the butter and melt it.
  2. Stir in the flour (to make a roux) and cook for around 3 to 5 minutes (or until it starts to look golden in color).
  3. Remove from heat and whisk in the heavy cream with low-sodium chicken broth until nice and smooth.
  4. Return to the heat on low.
  5. Add around 5 cups of the cheese and then simmer for around 8 minutes on a low simmer.
  6. Season with salt, white pepper to taste, and the granulated garlic powder (then taste it to see if it needs more) and Worcestershire sauce.
  7. If using hot sauce, stir this in now.
  8. Simmer for 2 more minutes to combine flavors.
  9. Stir in the crispy bacon (or you can serve this on top with more cheese)
  10. Serve with more grated cheddar, chopped fresh parsley, and chopped onions if desired.
