Mini Tortilla Chili Bowls

Mini Tortilla Chili Bowls

Mini tortilla bowls filled with beef or chicken-flavored style chili. Baked then topped with a variety of toppings. These little appetizers are the perfect party pleasers and great for Cinco De Mayo.
Prep time: 10 MinCook time: 18 MinTotal time: 28 Min

Ingredients

  • 6 large flour tortillas ( cut two per tortilla for a 12-cup muffin tin)
  • 1 cup of ground beef or small cubed chicken breast
  • 1/2 cup taco sauce or enchilada sauce
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 cup kidney or black beans
  • 1/2 cup shredded shredded or a Mexican blend of cheeses shredded
  • 12 - cup nonstick muffin pan
  • butter flavored cooking oil spray
  • Optional: sour cream, chopped tomatoes, shredded lettuce
  • Note: Leftover chili works terrific also if you happen to have some from another meal.

Instructions

  1. Preheat the oven to 425 degrees and spray a 12-cup muffin tin with cooking oil spray.
  2. Using kitchen shears, cut out pieces to fit each tin of the flour tortilla and place them into the prepared muffin tin then spray the top of each tortilla with cooking spray.
  3. Place the muffin tins with tortillas in the oven and bake until crispy for around 12 to 14 minutes. They should look golden browned and crispy.
  4. Note: these can be irregularly shaped just make sure they climb up the edge of the muffin tin lined to be able to fill. If you prefer to use a glass or cookie round cutter you can cut it out with a sharp knife also. I use the kitchen shears.
  5. In the meantime heat around 2 tablespoons of olive oil to a large frypan.
  6. Saute the beef or the chicken until all the pink is gone then drain.
  7. Add the beans, sauce, and seasoning and mix into the same pan with the beef and simmer for around 10 minutes.
  8. Fill each crispy baked tortilla cup with the meat/bean mixture and top with cheese then place back into the oven until the cheese melts for around 5 minutes.
  9. Garnish with the tomatoes, lettuce sour cream, and/or more suggestions under notes.
  10. Serving Suggestions: set up a serving bar with some of the suggestions under the notes below when hosting a party.
