Tips for Making Drop Biscuits

  1. Stir just until the flour is moistened. Overmixing can make biscuits dense instead of tender.
  2. Make sure the heavy cream is cold
  3. Do not overbake the biscuits
  4. Only stir until moistened. Do not overwork the dough
  5. For uniform biscuits, use an ice cream scoop to drop them on the baking sheet
  6. Don't overroll the dough. Rolling can compress the dough too much.
  7. When using a biscuit cutter, press straight down without twisting. Twisting seals the edges and prevents proper rising.
  8. Place biscuits slightly touching on the baking sheet for softer sides, or spaced apart for crispier edges.
  9. Biscuits are delicious served warm, plain, cinnamon butter, with butter, honey, jam, or country-style gravy

Heavy Cream Drop Biscuits

Made with heavy cream and just a few ingredients these melt-in-your-mouth tender biscuits will be the best biscuits you've ever eaten

Prep time: 4 MinCook time: 15 MinTotal time: 19 Min

Ingredients

  • Preheat the oven to 425 degrees. Prepare a baking sheet with parchment paper or a Silpat mat and set it aside.
  • 2 cups AP flour
  • 3 teaspoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups of heavy cream (the highest fat content, DO NOT substitute)

Instructions

  1. Add all the dry ingredients to a medium-sized bowl and stir or whisk them together.
  2. Slowly pour in the heavy cream and mix until the dry ingredients are blended and you don't see any flour. This takes around 40 seconds. Do not overmix the dough or keep stirring the dough.
  3. Note: I can't stress enough to just mix the batter until moistened, that's it, and don't overwork the dough.
  4. Drop the dough onto the prepared sheet using a large tablespoon or ice cream scoop.
  5. Bake the biscuits at 425 degrees for around 15 minutes or until the bottom edges are golden brown.
  6. Serve warm with butter, honey, jam or gravy.
