Leftover Chicken Salads can be a whole new meal, especially in sandwiches,  make some open-faced appetizers on toasted bread, stuffed inside tomatoes, or simply piled on salad greens.

The delicious salad is super easy to make, especially with rotisserie chicken and the best part is the dressing is simple to make and really takes leftover chicken to another level of yumminess.

Chicken Caesar salad is very popular in most restaurants and super easy to make in your own kitchen and our fresh Chicken Caprese with Avocado is a true delight for in flavors.

Try piling our salad in a wrap or on an open-faced sandwich for a change, these two salads are terrific any time of the week for a light lunch or whole meal.

Just cut out some fancy shapes with some bread and cookie cutters, toast them then just pile the chicken salad in mounds on top.

They're perfect for hosting a party by adding assorted ingredients to set up a serving bar.

Repurposing Leftover Chicken to Make a Fabulous Salad

  1. Gather all the seasoning in a bowl and mix together
  2. chop or shred cooked chicken to make sure it's boneless
  3. mix the dressing ingredients and toss with the salad items
  4. serve on a bed of greens, in a wrap, and see suggestions below for more fantastic ways to eat chicken salad

Tips and Suggestions for Making Chicken Salad


  • Use firm vegetables not overripe
  • Always season to taste you may like more or less
  • Add chopped olives
  • These salads make a great filling with any bread or wraps
  • Always use a good-grade oil with freshly squeezed lime juice
  • Keep the leftovers in the refrigerator for no more than two days
  • Store in a plastic container or plastic wrap

This chicken lemon salad is terrific topped on fancy lettuce greens, or in sandwich bread of your choice.

The chicken is boiled, baked, sauteed, breaded whatever leftovers you have, and of course rotisserie.

Leftover Chicken Salad Recipes

Here are two chicken salads made with cooked chicken. A popular Caesar Salad and Chicken Caprese Avocado Salad are deliciously both stunning to serve for brunch or dinner.

Ingredients

  • Chicken Caesar Salad
  • 2 cooked chicken breasts (preferably rotisserie style or grilled) chopped in cubed or shredded
  • 1 tablespoon olive oil
  • romaine lettuce sliced in shreds
  • grape tomatoes, halved
  • shaved Parmesan in long shreds
  • Optional: 1 cup of garlic croutons and a few more on top for garnish
  • Garnish: blue cheese or feta crumbles
  • Caesar Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon granulated garlic powder or 2 teaspoons of fresh minced garlic
  • salt and pepper to taste
  • Chicken Caprese and Avocado Salad:
  • 2 cups cooked cubed or shredded chicken
  • 2 avocados, peeled and diced
  • 1 cup grape tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh Italian flat leaf parsley chopped
  • 1/4 teaspoon dried oregano
  • 1 cup of mozzarella balls (small round balls)
  • 1 lime, juiced
  • 2 tablespoons of extra virgin olive oil
  • 1/4 teaspoon red pepper flakes salt to taste
  • Serving Suggestions: Shredded Romaine Lettuce, Baby Spinach, and Arugula Mixed Greens, Spring Mix ( or use your favorite salad mix)
  • Optional: more extra virgin olive oil for drizzling and freshly cracked black pepper

Instructions

  1. Chicken Caesar Directions:
  2. In a small bowl together add the chicken with the lettuce, tomatoes, croutons Parmesan cheese, and the oil then lightly toss together to coat.
  3. In a clean small bowl add all the ingredients listed for the dressing and whisk the ingredients together until well blended.
  4. Place the salad mixture into a serving bowl then add the dressing and toss the salad mixture until evenly coated.
  5. Serving Suggestions:
  6. Top with long shreds of Parmesan cheese and or feta or blue cheese and a few more croutons if you prefer.
  7. Chicken Caprese and Avocado Salad:
  8. In a large bowl add all the chicken, tomatoes, avocado, cheese, seasoning, and dressing ingredients together (except for the mixed greens as the chicken caprese items go on top of the salad greens).
  9. Mix all ingredients in a bowl except the salad greens.
  10. Place the mixed greens in a salad serving dish, and top with the chicken caprese avocado salad mixture.
  11. Serve with a drizzle of extra virgin olive oil on top and freshly cracked pepper if desired.
