Fresh-tasting lemony chicken salad with savory seasoning is so easy to make and has so many delicious uses, especially in sandwiches, appetizers, stuffed in tomatoes, or piled on top of salad greens.

The delicious salad is super easy to make especially if you happen to have leftover boneless chicken to use up but even bone-in chicken will work just by taking it all off the bone.

If you love the taste of lemon and olive oil, this will be your go-to chicken salad recipe especially piled high onto garlic bread toasted, it's addicting and a family favorite here.

The lemony chicken has no mayonnaise in our recipe and is perfect for picnic appetizers.

Just cut out some fancy shapes with some bread and cookie cutters, toast them then just pile the chicken salad in mounds on top.

Steps to Make the Best Chicken Lemon Salad

  1. Gather all the seasoning in a bowl and mix together
  2. chop or shred cooked chicken to make sure it's boneless
  3. mix the lemon and oil with the seasoning evenly then add the chicken
  4. toast the bread
  5. pile high add the garnish and enjoy!

  • Toast the bread first
  • Always season to taste you may like more or less
  • Use granulated garlic powder for a garlic bread flavor
  • Always use a good-grade oil with freshly squeezed lemon juice
  • Keep the leftovers in the refrigerator for no more than two days

Lemon Chicken Salad Sandwich

Lemon Chicken Salad with no mayo piled high on a toasted garlic bread roll or submarine sandwich. Garnish with lettuce and tomato if desired.

Ingredients

  • 2 cups chopped cooked chicken (rotisserie, left fried with skin removed, or other leftover chicken without the skin cooked
  • 1/2 teaspoon dried oregano
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon granulated garlic powder
  • salt and pepper to taste
  • Serve on toasted garlic rolls, Italian hoagie toasted garlic rolls or regular Italian toasted garlic bread
  • Garnish: lettuce leaves, sliced tomato, sliced black olives, banana, roasted or jalapeno pepper slices

Instructions

  1. In a medium-sized bowl, add the lemon, olive oil, seasoning, and salt with pepper to taste. Whisk together with a fork or small whisk. Set this aside.
  2. Remove the chicken off the bone on a cutting board, and dice it into cubes or long shreds.
  3. Place the chicken in the bowl with the lemon mixture and toss gently with a fork.
  4. Let this sit for around 10 minutes.
  5. In the meantime get the bread toasted you're using and the garnishes prepared.
  6. Toast the roll adding butter, pepper, oregano, and granulated garlic powder under the broil just until it's lightly browned.
  7. Slice the tomato (if using) wash the lettuce and dry it with paper towels.
  8. Place the lettuce and tomato on the garlic bread and pile on the chicken.
  9. Note: Add any other additions mentioned before the chicken is added.
