Easy Steps for Making the Best Lemony Pork Chops

  1. Preheat the oven to 350 degrees and line a baking sheet or casserole pan with parchment paper
  2. Saute the chops in olive oil in a gridded cast iron skillet just until charred marks appear
  3. In a small mixing bowl mix the lemon juice, zest, and seasoning
  4. Pour over the chops
  5. Bake for around 25 minutes or until the internal temperature reaches 145 degrees using an instant-read thermometer

Lemon and Herb Pork Chops

Tender moist and citrusy-lemon flavored pork chops using the freshest and finest ingredients

Ingredients

  • 4 center-cut bone-in pork chops, at least 1 inch thick
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 4 tablespoons melted butter
  • 3 garlic cloves finely minced
  • 4 tablespoons freshly squeezed lemon juice
  • 1 lemon sliced
  • 1 tablespoon grated lemon zest
  • 1 tiny sprig of rosemary chopped fine
  • 1 teaspoon minced fresh oregano
  • 1 tablespoon fresh flat-leaf chopped parsley
  • Garnish: fresh lemon slices and rosemary sprig

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a small bowl mix all the herbs, zest, and lemon juice together with lemon slices and set aside.
  3. Heat a gridded-style cast iron skillet with the olive oil and saute the chops on both sides until these get a nice char of grill marks. (see for outdoor grilling in cooking methods).
  4. Place the grilled chops on the baking sheet and pour the juice and butter mixture over them.
  5. Bake for around 20 minutes or until the internal temperature reaches 145 degrees using an instant-read thermometer.
