10 Minute Eclair Cakes

Eclair cakes made with graham crackers, instant pudding, and whipping topping can be a new dessert every time you make one. We have several ideas for you to try!

Ingredients

  • This is the basic recipe. Mix and match whatever you prefer, and check out the notes for ideas:
  • 2 boxes (3.5-ounce-sized) of instant chocolate, vanilla, or another instant pudding mix ( homemade or cooked pudding can be substituted)
  • 3 cups of whole milk
  • 1 - 8-ounce container of thawed whipped topping (or homemade heavy sweetened whipped cream can be substituted)
  • 1 box (1 pound) graham crackers or cookies of choice (see notes below)
  • 1- 16-ounce container of canned chocolate fudge frosting, vanilla frosting or another flavor can be substituted
  • NOTE: Frosting is the top layer for eclair cake; however, this can be omitted for a less sweet dessert, or you can melt dark or white chocolate for the top layer

Instructions

  1. Place the pudding in a large (preferably glass) bowl, and whisk the pudding with milk until thickened.
  2. Using a spatula, fold in the whipped topping.
  3. For easy removal, line a 13 x 9 casserole pan with parchment paper.
  4. Begin layering:
  5. First line the bottom of a 13 x 9-inch glass baking dish with graham crackers or cookies.
  6. Spread with whipped cream mixture.
  7. Add another layer of graham crackers.
  8. Topping the end with graham crackers last.
  9. Microwave the plastic container of frosting for around 11 seconds.
  10. Note: if you aren't using the frosting just add more whipped topping on the last layer and sprinkle with mini chips or colorful sprinkles.
  11. Pour over the top of the last layer of graham crackers.
  12. Refrigerate until serving or at least 4 hours.
  13. Slice and serve.
  14. Optional Garnish: add a dollop of whipped cream and mini chocolate chips on top for garnish.

  • Start with instant puddings or cooked puddings homemade or boxed whatever you prefer:
  • vanilla pudding: bananas and whipped cream remember that old-fashioned banana pudding
  • chocolate pudding: combined with chopped candy, red raspberries, mini chocolate chips, chopped cherries
  • banana pudding: sliced banana or mango, diced pineapple
  • coconut pudding: if you can't find coconut pudding, just toast coconut and add it to the pudding
  • butterscotch pudding: chopped peanut butter cups
  • French vanilla pudding: any fruits, chopped candy bars, mint chocolate, maraschino cherries
  • lemon pudding: any fruits can be added
  • whipped topping or whipped heavy cream sweetened: tint the cream or add some cocoa powder
  • graham cracker substitutions: pretzel crust, crushed cookie crust recipes of any cookie can be used instead of graham crackers IE: vanilla wafers, sandwich cookies, shortbread cookies, oatmeal cookies, etc.
  • fruits: sliced bananas, diced peaches, sliced strawberries, diced apples dipped in lemon juice to avoid browning added to the pudding of choice
  • candy bars: crushed candy bars mixed in with the pudding or sprinkled on top of the whipped topping.
  • ice cream toppings: add hot fudge, melted frosting, or another jarred ice cream topping on the whipped topping when serving
  • frosting: chocolate, cherry, vanilla, and German chocolate can all be substituted or even omitted for a less-sweet dessert
