Ingredients
- 2 pounds thin-sliced flounder (around 4 thin slices)
- 1 teaspoon granulated garlic
- 1/2 cup white wine, preferably Pinot Grigio
- Extra virgin olive oil
- Shrimp Stuffing
- 6 medium sized cooked shrimp (tails off) for each filet
- 1/3 cup Italian-flavored breadcrumbs and more for the top
- Optional salt, pepper to taste, dash of cayenne pepper
- 4 tablespoons of butter (one for each slice inside each filet)
- 3 cloves of fresh garlic, finely minced
- 1/4 cup freshly minced Italian parsley
- 4 sprigs of fresh dill and 4 leaves of fresh basil leaves
- Serve with lemon is optional on top
Instructions
- Preheat the oven to 400 degrees. Line a deep casserole dish with parchment paper.
- Lay out the filet on a cutting board for easy rolling.
- Place the shrimp on the filet.
- Add minced garlic, all the herbs, then sprinkle with breadcrumbs
- Add any seasoning you prefer next.
- Top with butter.
- Roll up each filet and secure with a toothpick or small skewers.
- Place them seam side down in the casserole dish.
- Drizzle with a little EVOO, sprinkle with more breadcrumbs, then granulated garlic powder.
- Add the wine to the bottom of the casserole dish, not touching the fish.
- Bake in a preheated oven for around 20 minutes.
- Note: Use an instant read themometer to ensure the internal temperature of the filet is at 145 degrees.
