Quick and Easy Pasta with Broccoli, Chicken, and Lemon Dish
- Prepare the pasta to the package instructions
- steam the broccoli
- use boneless cooked chicken cubed
- add to a frying pan saute garlic and heat the broccoli and chicken to coat
- season the ricotta cheese with lemon zest, salt and pepper
- toss all together and serve in a large pasta bowl

Broccoli Lemon Chicken Pasta
Ingredients
- 8 ounces of any kind of pasta cooked to package instructions (we prefer fun shapes)
- 2 tablespoons of butter
- reserved pasta water 1/2 cup
- 2 tablespoons freshly squeezed lemon juice
- 1 small lemon zested ( saving some for the garnish if desired)
- Note:
- Use fresh lemon for best results use more or less to your own taste we do not make it overpowering for more lemony flavor garnish with more fresh lemon on top or freshly squeezed lemon juice
- 1 cup whole milk ricotta
- salt and pepper to taste
- 1 cup cooked boneless cubed or shredded chicken ( we use rotisserie chicken or leftover cooked meat of any kind)
- 2 cups of steamed broccoli florets
- 1/3 cup Parmesan or Pecorino Romano grated (you can also use a combination of both)
- 3 cloves of minced garlic
- 3 tablespoons extra virgin olive oil
- 2 fresh torn basil leaves salt, and pepper to taste
- Optional: top the hot pasta when serving with shredded mozzarella
- Optional Garnish: fresh lemon wedges and more basil, grated cheese, salt, pepper and red pepper flakes to taste
Instructions
- In a large saucepot fill it with water add a 1/2 teaspoon of salt with the pasta and cook to package instructions. Reserve around 1/2 of pasta water.
- Drain the pasta, add the pasta water, lemon juice, and 2 tablespoons of butter, and set it aside.
- Place the ricotta with 2 teaspoons of lemon zest, grated cheese, basil, olive oil, salt, and pepper to taste, in a bowl, then cover it, and set aside.
- Heat a frying pan with the oil and saute the garlic add the steamed broccoli and coat for flavor then heat the cooked chicken.
- In a large pasta bowl, add the pasta with chicken, and ricotta mixture and gently toss together until blended.
- Garnish with more grated cheese, lemon zest, and fresh basil if desired.
