Artichoke Hummus with Roasted Garlic

Hummus is so easy to make and healthy and our artichoke with roasted garlic is a fantastic flavor combination.

This easy dip is made in no time using a few modern-day appliances to puree the ingredients like a food processor.

We also added our favorite roasted garlic in this chickpea and artichoke appetizer hummus the recipe is just bursting with fresh flavors.

If you love making easy appetizers when hosting a party this one is great served with vegetables for a low-calorie healthy dip.

We also have several other suggestions for those who prefer a crunchy chip with their dips like crackers, chips, and bread if you don't mind adding the extra carbs.

Tips and Suggestions

  1. Pulse until smooth
  2. Use white canned beans for a different twist on hummus
  3. If too thick add more water
  4. For a change add fresh spinach leaves instead of artichokes
  5. Top with toasted breadcrumbs for delicious topping

Artichoke Hummus with Roasted Garlic

Artichoke Hummus with Roasted Garlic

This is a great combination of flavors in a dip with artichokes and chickpeas called hummus. Easy and healthy!
Prep time: 15 MinCook time: 40 MinTotal time: 55 Min

Ingredients

  • 1 - 14-ounce can of chickpeas
  • 1 -14-ounce can artichoke hearts
  • 1/2 cup tahini
  • 2 -tablespoons lemon juice
  • 2- garlic cloves roasted (see notes below)
  • 1/4 cup water
  • 1 teaspoon sea salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon chopped parsley, for garnish
  • Drizzle Garnish: extra virgin olive oil
  • Optional: paprika for garnish on top

Instructions

  1. Place the chickpeas, artichokes, tahini, lemon juice, roasted garlic, water, salt, cumin, and red pepper flakes in a food processor and pulse to puree until smooth.
  2. Add salt and pepper to taste.
  3. Serve with a drizzle of extra virgin olive oil on top and freshly chopped flat-leaf parsley and sprinkle with paprika if desired in the center.

Notes

Roasting Garlic:

Heat the oven to 400 degrees.

Place the garlic with skins on in a cupcake tin (or wrap tightly in foil with the ingredients listed below).

Drizzle with olive oil.

Baked for 40 minutes.

Remove skins.
