
Healthy, fresh sauteed tender baby spinach, delicious any way you serve it!

Spinach sauteed in garlic, extra virgin olive oil, red pepper flakes, salt and pepper, on Italian bread. This happens to be a night when my husband works late. I decided, since I am trying to eat healthier, I would have this spinach in a sandwich instead of making this as the usual side dish. I love to make spinach like this, use this recipe with
Haddock or even mixed with
Lasagna. But when I eat alone, I really don't make much for just myself, or skip dinner all together. So here was my healthy alternative. I love spinach this way, and why not in a sandwich? I use the same filling for
spinach calzones. So viola! Here is my dinner tonight.

The smell of the fresh garlic frying in the house, hits you right in the face when you walk in the door, besides
chocolate chip cookies baking I don't know a better smell cooking!
Italian Style Spinach
2 cloves fresh garlic sliced in slivers
1 bag of baby fresh spinach
1/4 cup extra virgin olive oil
red pepper flakes for heat to taste
salt and pepper to taste
Italian Bread
Saute garlic in olive oil till slightly browned, add spinach and saute till wilted and soft.
Pile high with spinach onto the Italian bread and enjoy!

ReplyDeleteThis is my all time favorite way of making sauteed spinach. I never thought of putting it on a sandwich though. I like the idea though...some nice bread maybe a little cheese.MMMMmmmm...Sounds like a great lunch to me dear!
