A Great Dinner


Whenever I have company, I love to use the slow cooker.


I have a 7 quart slow cooker and can make a large roast.


After searing the meat in a large dutch oven, I transfer the meat to the slow cooker and add all the ingredients to the slow cooker.

Tips



If using the Slow Cooker Method always pan brown your tenderloin on both side in olive oil or butter for more flavor.


A combination of oils are preferred.


I also prefer to use freshly squeezed lemon juice with grated lemon peel, for a delicious lemon acidic flavor.

Marinade for Lemon and Garlic Herb Crusted Pork Tenderloin

prep time: 20 minscook time: 35 minstotal time: 55 mins
A great marinade for a fork tenderloin of pork

ingredients:

1 1/2 lb pork tenderloin
2 cloves of fresh minced garlic
1 tablespoon of honey
2 tablespoons of extra virgin olive oil
1 teaspoon each  oregano, basil, parsley
pinch of rosemary
salt and pepper to taste
juice of one lemon
1 teaspoon of lemon zest
Place all ingredients in a large plastic bag and marinate overnight or up to 4 hours. 

instructions:

NOTE:  If using a slow cooker, sear meat in a fry pan on both sides in some olive oil and butter till brown and flip over. Place browned pork in a slow cooker with 6 to 8 hours on low.
Oven Method:
Bake in oven covered the first 20 minutes,  in roasting pan with juices. Uncover and cook another 35 minutes  until browned, and pork is cooked all the way through.
Cook pork for 20 to 30 minutes.
Alternative, you can also grill this outside when weather permits, slice the tenderloin into pork loin steaks and cook on the grill till browned and thoroughly cooked on both sides.
