Peach Air Fried Hand Pies

Peach Air Fried Hand Pies

Store-bought pie dough and sweetened peaches are the perfect little summer hand pie.

Ingredients

  • 2 cups peeled and diced peaches (about 4-5 peaches)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 - package of store-bought refrigerated pie crusts (or homemade if preferred) All-purpose flour (for dusting)
  • Garnishing and assembling: 1 egg (for egg wash) 1 tablespoon water 2 tablespoons granulated sugar (for sprinkling)

Instructions

  1. In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, ground cinnamon, vanilla extract, and cornstarch.
  2. Stir them to coat the peaches evenly.
  3. Let the mixture sit for around 15-20 minutes.
  4. Floured a board or surface, and roll out the pie crust thinly to about 1/8-inch thickness.
  5. Use a round cutter around 4 inches to make a circle cut out. 
  6. Place a spoonful of the peach filling in the center, leaving a border around the edges. Be careful not to overfill. 
  7. Beat the egg and water to make an egg wash in a small dish. Brush the edges of the dough circles with the egg wash.
  8. Fold over the dough to make a half-moon shape.
  9. Press the edges firmly to seal. Crimp the edges for a decorative touch.
  10. Air Frying: Preheat your air fryer to 375°F (190°C).
  11. Place them in the air fryer basket, making sure they are not touching each other.
  12. Air fry between 8- 11  minutes, or until they are golden brown.
  13. Flip them at the halfway mark of time.
  14. Cool slightly before adding anything on top for garnishing.
  15. While they're still warm, sprinkle the tops of the pies with granulated sugar for a little extra sweetness and a nice crunch.
  16. Filling is hot so cool a few minutes before serving.
  17. They can be enjoyed warm or at room temperature.
  18. Optional: Drizzle a simple glaze made from powdered sugar and a small amount of milk over the cooled hand pies for an extra touch of sweetness,  sprinkle with cinnamon and sugar mixture, or powdered sugar
