- prepare baking sheets with oil spray or parchment paper
- preheat the oven to 350 degrees
- mix all ingredients and fold in any mix-ins
- bake for 12 to 14 minutes
- cool and frost

Delicious easy Carrot Cake Mix Cookies with just a few ingredients using a doctored cake mix and homemade cream cheese frosting are a delightful treat!
Ingredients
- 1 carrot cake mix
- 2 eggs
- 1/2 cup melted butter or cooking oil
- 1/2 teaspoon cinnamon
- Mix-ins:1/2 cup of grated carrots, 1/4 cup of chopped raisin, 1/4 cup coarsely chopped walnuts, 1/4 cup coconut ( add what you prefer, if you don't like some of those options omit them)
- Cream Cheese Frosting
- 1/2 cup butter
- 4 ounces of cream cheese at room temperature
- 2cups powdered sugar
- 2 teaspoons vanilla extract
- pinch of cinnamon is optional
- milk if needed to make a thinner consistency
Instructions
- Preheat oven to 350 degrees. Grease a baking sheet or line it with parchment paper.
- In a large bowl, add the mix, eggs, and oil until the mixture is evenly combined.
- Add the optional grated carrots, raisins, coconut, and nuts if used in this step.
- Using a tablespoon or a cookie scoop, place the cookies on the prepared baking sheet 2 inches apart.
- .Bake in the oven for around 10 to 12 minutes or just until the edges begin to brown.
- Cool completely before frosting.
- Cream Cheese Frosting
- Whip the butter, cream cheese, and vanilla together in a bowl.= using an electric mixer.
- Stir in the powdered sugar and beat evenly until it's a nice spreading consistency.
- If it's too thick add a little milk to thin it out.
