Saturday, August 30, 2014
Mom's Grilled Sausage Patties Potatoes and Peppers  are the best smell I remember her cooking as I child. Those flavors are etched in my mind forever. I will always miss her cooking. Even making it myself will never duplicate mom's flavors. The smells when I came home from school with this baking in the oven was heavenly.

You may remember Mom's Sausage Recipe? Well this is the same recipe just made into sausage patties adding peppers and potatoes.

Homemade Sweet Potato Baby Food

Sunday, August 24, 2014
Making Homemade Baby food is easier than you think and this Baby food Sweet Potato Mash Recipe is quick and simple to make!

It really isn't time-consuming since you can make it so many ways.

I love knowing how much healthier making my own baby food is and what I am giving to the kids, it's total peace of mind.

You will have to choose how you would prefer and time you have to do this.

I prefer to roast my vegetables and not use canned always fresh to preserve the vitamins in them.

However, if you find yourself with time constraints, boiling is the next best option, although you will lose some benefits of vitamins lost.

After having two of my own children and now grandchildren, I feel safe knowing what they're eating by making their baby food from scratch and homemade.

I highly recommend doing this if you have the time.

It really is easy to do and the babies all loved sweet potatoes and the apples, you can choose from the many suggestions below using this same method on what you want to prepare for your baby.

It was pretty darn tasty, can't believe I never tried it before. Peanut butter cake tends to be a little dry, so be sure and watch you don't over bake this one and follow the package instructions.
(psst no one will know you used a cake mix, I just love easy recipes.)

Jennifer got a beautiful special present this week, her mom flew in from Kentucky to visit for her birthday week and to see Antonio for the first time. These were such precious moments between mother and daughter, it brought tears to my eyes.  So we have a double celebration going on here and the bigger party with whole family coming up this Sunday. Antonio is getting lots of love from his reunion with his grandmother Sandy Carmen. We are all so thrilled to have them all together.

Either using fresh peaches or canned pie filling for your topping, this is a refreshing and quick pie to make for any gathering or family function. This brings the beginning or end of summer a big feeling of warm sunshine. The filling is perfect, still light enough with that cool smooth creamy taste but not to heavy after a big meal. This is sure to hit the spot for all our peach lovers. If you prefer a different topping and just want fresh fruit all the better too!

Blueberries, cherries, strawberries and raspberries are all fabulous toppings. If you really in a hurry use pie filling!

Orange Almond Coffee Cake Recipe

Sunday, August 17, 2014
Being a wife, mother of two grown sons and now have grand children, I look for quick and simple ways to make tasty foods than ever before. I guess I am slowing down. Even with the kids grown I find less and less time to do what I use to or the motivation to keep going. Here is a simple coffee cake using refrigerator roll dough to make this delicious coffee cake bursting with orange and almond flavor.

Orange Almond Coffee Cake Recipe

1 can refrigerator brand orange sweet rolls (found in the dairy area along with cookie section of your supermarket) if you can't find these use cinnamon rolls
8 teaspoons orange marmalade warmed in microwave 30 seconds
1/3 cup flour
2 tablespoons sugar
1/2 cup almond paste
3 tablespoon chopped butter
whole toasted and sliced almonds toasted around 1 cup
1 can cream cheese frosting
Optional: If you love more orange flavor sprinkle zest over the marmalade stage!
1 9 inch round or square baking pan sprayed with cooking oil
Preheat oven to 350. Place the dough rolls in the greased pan and drizzle warmed marmalade over the tops.
In a small bowl add the flour and sugar. Using a fork add in the butter, almond paste and mix until crumbling. Sprinkle over dough.
Bake on 350 degree hot oven until browned around 25 minutes.

While warm spread with cream cheese canned frosting note: (the packet that comes with it is not enough frosting). Sprinkle with sliced and toasted almonds. Cool 20 minutes before serving.

Flounder Francese (Egg Coated Recipe)

Sunday, August 10, 2014
Seafood was always a favorite in our home prepared like this Flounder Francese.

My mom's all-time favorite was anything Francese with fish or chicken and this was her easy recipe that I hold near and dear to my heart.

When she was still alive, she made this sauce and it was great on all kinds of white fish.

Usually, this was prepared and poured over cod or haddock.

Being, on a tight budget, those two fish was an inexpensive substitute for Flounder back in the 1960s.

We never had the money for a fancy fish like flounder in those days, she would surely have loved this delicate fish.

It was always cod or haddock and fabulous.

Cod baked or haddock fried was a staple back then every Friday, this style francese was done on special occasions.

Sometimes mom would filet a chicken breast and use boneless chicken as well.

I make this recipe often in mom's memory and it never fails me, hopefully, if you are a seafood or chicken lover you will really enjoy this recipe as much as we do and keep her memory alive.

Scroll down to the recipe card to print this off.
