One Pan Easy Beef Stew with White Wine Recipe 

2 cups each fresh, frozen or canned green cut beans, mushrooms, cubed zucchini, carrots, peas
1 or 2 lbs whole baby potatoes or cubed fresh potatoes
1 - 28 oz can crushed tomatoes or 2 pounds fresh plum tomatoes pureed
1 teaspoon each fresh or dried oregano, basil, rosemary and parsley
pinch cayenne pepper
1 teaspoon Italian seasoning
salt, pepper to taste
1/2 cup white wine (I used Chablis)
1/2 cup or more of water
2 lb London Broil cut in cubes
4 cloves minced garlic
3 tablespoon olive oil
2 bell peppers chopped

In a large dutch oven, saute beef in oil add the peppers. Saute until all the pink is gone (around 10 minutes), adding the garlic 2 minutes before done.. Add all the rest of the vegetables, drained if canned. Stir in crushed tomatoes, wine and seasonings. Simmer on low for around two hours, add basil around 1/2 before cooking is finished. Serve with crusty Italian bread to dip in the sauce.

Even making it myself will never duplicate mom's flavors. The smells when I came home from school with this baking in the oven was heavenly.

Here is one of the best sides dishes for any meal. Whether it's seafood, meat, grilled foods, these croquettes are always asked for. The hint of garlic and cheese makes them even better and you can adapt them to whatever you like and add other delectable flavors to these.

Cheesy Potato Croquette Recipe

3 cups leftover mashed potatoes
1 egg
3 tablespoons flour
2 tablespoons fresh chopped or dried parsley 
1/2 teaspoon garlic powder granulated more for the tops
1/4 teaspoon black pepper
salt to taste
Italian flavored Panko bread crumbs or seasoned Italian style bread crumbs
1/4 cup grated parmesan cheese

olive oil for drizzling over the tops before baking

Optional suggestions to add: ( 1 tablespoon additions) Chopped onions, peppers, mushrooms, jalapeno's, shredded mozzarella, shredded cheddar. Also to make these even more spicy add 1 tablespoon hot sauce to the potatoes when mixing. A more savory taste? Add 1 tablespoon ranch dressing, sour cream or cream cheese instead.

Mix the leftover potatoes with the egg, garlic, pepper, parsley you can add more salt to taste if they weren't seasoned enough also add any of the the additions at this point. Using an ice cream scooper, take one scoop of the mashed potatoes and place into the panko bread crumbs that have been spread out on a plate. Coat both sides using your fingers to keep crumbs patted down on the sides and tops and place on a silpat mat or parchment paper using a spatula. When your done forming the croquettes drizzle with olive oil on top and more garlic powder lightly then bake at 350 degree hot oven until browned.

Easy Apple Filled Breakfast Roll Recipe

Funny how history repeats itself, my son Chad loves my cinnamon buns and so did my dad (R.I.P.). I had to make these in his memory today since it's his birthday today. No, these are not as good as yeast risen rolls but certainly better than refrigerated dough rolls from your dairy case at the supermarket. My son really loved these fresh apple baked breakfast rolls.

  My father would have loved them too. It would have been his 102nd  birthday today had he still been alive, miss him so much, R.I.P. daddy, he passed on in 1995.

 The apples makes these just delicious, the aroma in the kitchen is fantastic and the frosting adds the perfect addition to the sweetness of these. I don't know what they taste like the next day because there were none left.

Hope you like them as much as we did.

Soft Dough Recipe for Rolls:

2 cups flour more for rolling the dough
3 teaspoons baking powder
1 teaspoon salt 
2 tablespoons sugar
3 tablespoons melted butter
1/4 cup milk
1/2 cup applesauce
1 egg

Using an electric mixer mix the the dough with a flat beater. Place on a floured surface and roll out the size of a brownie pan 12x9.  Brush dough with melted butter and then sprinkle with cinnamon and sugar mixture (below)  on the dough lightly.
Place the apple filling (below)  onto the dough and roll up like a jelly roll pinching the seam together on top.

 Slice rolls and place on a parchment lined brownie or jelly roll pan.  For a shine on the dough, brush with beaten egg over the tops of the rolls before baking(I skipped that step).  Bake at 350 degree preheated oven around 25 minutes or until browned. 

Drizzle frosting over the rolls 10 minutes after they are out of the oven cooling. Serve warm.

Apple filling:

2 medium apples chopped in small pieces
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon flour
Mix all together in a bowl and set aside

Cinnamon and Sugar:

Cinnamon and sugar mixed together 3 tablespoons to 1 teaspoon cinnamon.

Melted butter (around 2 tablespoons)  to brush on the dough.


1 cup powdered sugar
2 to 3 teaspoons warm water 
1 tablespoon butter softened

Peach Pear Galette Recipe

A favorite with fresh fruit served with ice cream or whipped cream you have the perfect beginning or end of summer dessert. These flavors just work perfect together. During the winter months feel free to use drained canned fruits or frozen. 

3 or 4 sliced peaches skin removed
2 fresh red or any other pears sliced and skins removed
peach, pear or apricot jam
2 crusts or pie dough homemade or store bought
pie crust cutters for leaves ( purchased at a specialty baking store)
granulated sugar

Roll out pie crusts one large round saving some for the leaf edges or other cookie cutter you like.
In a medium bowl mix the fruit together. 
Add to the center of the pie dough and pour warm jam over the top.  Bring the edges up crimping all towards the center. Place the leaves along the crimped edges and sprinkle with granulated sugar. Bake at 400 degrees until browned for around 35 to 45 minutes. Serve warm with ice cream.

Baby Food Sweet Potato Mash Recipe

Antonio our precious grandson (see photo below),  absolutely loves sweet potatoes, just like his own daddy did when he was a baby. With the prices of baby food today, you can make your own in such little time with little money and much healthier knowing what's in it. Freeze leftovers, or place in jars for 2 or 3 days at the most. Remember do not use your spoon into the jar while feeding the baby, always pour into a dish. 
The saliva can cause bacteria to the food. 
This sweet potato mash is for 4-6 month old babies.

Baby Food Sweet Potato Mash Recipe 

Sweet potatoes as many as you want to make these can be baked piercing with holes then removing the skins after baking for 45 minutes. You can also cube and boil them or steam them with skins off.
All methods work fine.

After they are cooked to your desired method, place in a food processor and add water a little at a time, ( I use bottled water or some of the boiled water if you have cooked on the stove top ) until you reach the consistency you like pulsed until smooth.

Place in little jars is recommended for refrigerator use.

Place in small plastic zip lock freezer bags and freeze any leftovers.

You can keep in the refrigerator 2 to 3 days. Freeze the rest for future use up to 3 months.

I decided to attempt this Cake Mix Peanut Butter Texas Sheet Cake Recipe I found in our Blessed Sacrament Church cookbook from the 1970's. It was pretty darn tasty, can't believe I never tried it before. Peanut butter cake tends to be a little dry, so be sure and watch you don't over bake this one and follow the package instructions.

Here is a cake I experimented with for my future daughter in law Jennifer Carmen's birthday today. This chocolate cake is infused with a banana caramelized topping that just melts in your mouth and has a hint of rum flavor. I hope she likes it, I wanted to share her special day with all of you.

Jennifer got a beautiful special present this week, her mom flew in from Kentucky to visit for her birthday week and to see Antonio for the first time. These were such precious moments between mother and daughter, it brought tears to my eyes.  So we have a double celebration going on here and the bigger party with whole family coming up this Sunday. Antonio is getting lots of love from his reunion with his grandmother Sandy Carmen. We are all so thrilled to have them all together.


Chocolate Banana Rum Upside Down Cake Recipe

1 chocolate  cake mix with pudding inside made per package instructions plus 2 tablespoons dark rum added to the batter (the rum is optional, if you don't want to use it try some banana extract)

1 stick butter melted

3/4 cup brown sugar

4 bananas sliced

This is also an absolutely delicious way to use your bananas up!

In a 13 x 9 pan melt the butter and make sure the sides are greased with cooking oil or shortening. Place the brown sugar on top of the butter, then add evenly around all the sliced bananas. Pour the batter over the bananas and bake for 40 to 45 minutes at 350 degree preheated oven.
Invert onto a large cookie sheet. Cool serve with whipped cream. Keep refrigerated.

One of our very favorite pasta to make home made are manicotti. They really aren't hard to do. The biggest thing is you need a non stick pan that is either 6 inch or 8 inch. Anything else is too big.  Invest in that first before attempting to make them. Hope you will give this Italian specialty a try. We usually have them at Holiday time, they always have been saved to make for special occasions.  Treat yourself. Scratch Butter Pound Cake Recipe

The perfect cake to use when having coffee, tea or you can dress it up with fresh fruits and whipped cream. Either way you will love this versatile cake that I make often with many different toppings. I will leave you some combination suggestions we just love!

 Scratch Pound Cake Recipe

2 sticks butter
1/2 cup butter flavored shortening
3 cups sugar
5 eggs
1 teaspoon lemon or orange zest
1 teaspoon vanilla
1/2 teaspoon sea salt
1/2 teaspoon baking powder
3 cups flour 

With an electric mixer cream the butter and shortening together. Add the sugar a little at a time beating for at least two minutes. Now add the eggs one at a time beating until combined. Mix in the dry ingredients alternating with milk and flour, adding the zest then vanilla. Heavilly grease a bundt or tube pan with butter, sprinkle the bottom with flour or use lots of cooking oil or shortening to grease. Pour batter into pan.  Bake in a preheated at 350 degrees around 1 and 1/2 hours or until middle comes out clean using a toothpick. Cool 2 minutes then flip onto a board lined with wax paper to cool.

Suggestions for toppings ingredients are in order to be place on cake slices:

Banana slices, caramel ice cream topping, whipped cream
Raspberries whole, nutella and whipped cream
Strawberries sliced, warmed strawberry jam, whipped cream
Blueberries whole, warmed blueberry jam, vanilla ice cream
Apple Pie filling, crumbles of shortbread cookies, whipped cream
Chocolate pudding, crushed candy bars of choice, whipped cream
Any pudding, chocolate chips, whipped cream

Or just dust with powdered sugar and enjoy!

No Bake Peach Cheese Pie Recipe

Either using fresh peaches or canned pie filling for your topping, this is a refreshing and quick pie to make for any gathering or family function. This brings the beginning or end of summer a big feeling of warm sunshine. The filling is perfect, still light enough with that cool smooth creamy taste but not to heavy after a big meal. This is sure to hit the spot for all our peach lovers. If you prefer a different topping and just want fresh fruit all the better too!

Blueberries, cherries, strawberries and raspberries are all fabulous toppings. If you really in a hurry use pie filling!

I just love NO BAKE PIE Recipes!!

No Bake Cheesecake Peach Fruit Pie

1- 8 ounce container of whipped cream topping non dairy thawed

4 ounces mascarpone cheese and 4 ounces cream cheese (or use 8 ounces of one or the other)

1/2 cup powdered sugar (up to 1 cup if you like sweeter)

1 teaspoon peach schnapps or almond extract if using another fruit for your topping

1 pre made graham cracker pie shell (extra large one if you can find them it has more room for the topping)

For Topping:

peach topping recipe below, fresh fruits sliced, pie filling

Directions for pie:

Beat the cheeses and almond extract until softened. Slowly add the powdered sugar and blend together. Taste for desired sweetness. Fold in the whipped cream, blend until light and fluffy.

Using a spatula spoon, add this to the pre made graham cracker crust and refrigerate around 30 minutes. Add any topping you like.

Peach Topping homemade ( you can use pie filling if your in a hurry)

2 cups sliced and skin peeled fresh peaches (or use fruit of choice.) Note: You can also use canned peaches drained and use that juice instead of apple juice below)

1/2 cup apple juice or water

1/3 cup sugar

2 - 1/2 teaspoons cornstarch

Combine the sugar, juice and cornstarch in a medium saucepan, bring to a boil and cook until thickens. Add the peaches, set aside to cool while making the pie.

Orange Almond Coffee Cake Recipe

Being a wife, mother of two grown sons and now have grand children, I look for quick and simple ways to make tasty foods than ever before. I guess I am slowing down. Even with the kids grown I find less and less time to do what I use to or the motivation to keep going. Here is a simple coffee cake using refrigerator roll dough to make this delicious coffee cake bursting with orange and almond flavor.

Orange Almond Coffee Cake Recipe

1 can refrigerator brand orange sweet rolls (found in the dairy area along with cookie section of your supermarket) if you can't find these use cinnamon rolls
8 teaspoons orange marmalade warmed in microwave 30 seconds
1/3 cup flour
2 tablespoons sugar
1/2 cup almond paste
3 tablespoon chopped butter
whole toasted and sliced almonds toasted around 1 cup
1 can cream cheese frosting
Optional: If you love more orange flavor sprinkle zest over the marmalade stage!
1 9 inch round or square baking pan sprayed with cooking oil
Preheat oven to 350. Place the dough rolls in the greased pan and drizzle warmed marmalade over the tops.
In a small bowl add the flour and sugar. Using a fork add in the butter, almond paste and mix until crumbling. Sprinkle over dough.
Bake on 350 degree hot oven until browned around 25 minutes.

While warm spread with cream cheese canned frosting note: (the packet that comes with it is not enough frosting). Sprinkle with sliced and toasted almonds. Cool 20 minutes before serving.


Quick Easy Blueberry Turnover Recipe

Actually this isn't a recipe more how to get a great dessert on the table in less than 25 minutes counting baking time! Of course if you prefer to make everything from scratch these will take longer. All I can say is with a few ingredients your going to love these fresh blueberry turnovers and so will any other blueberry lover. Are you ready lets get started with this easy to make dessert!

Quick Easy Blueberry Turnover Recipe

Here's all you need:

1 cup fresh blueberries per turnover

 or 1 cup other kind of fruit you like just coordinate the jam flavor with the fruit you choose

2 or 3 tablespoon blueberry jelly, jam or preserves
 (you also can use whatever else you have on hand)

store bought pre made pie crust dough  (you will need a 9 inch pie round)
(or use homemade see below links with recipes.)

1 can vanilla frosting for garnishing

1 fork

granulated sugar

Take the pie crust and unroll the circle. Place the berries in the middle add the jam, fold over and crimp the edges.  Sprinkle the top with sugar.
Bake in a 350 degree preheated oven on greased cookie sheet. For easier clean up use foil sprayed with cooking oil, parchment paper or a silpat mat.  They all work except don't use wax paper it sticks and smokes in the oven causing a bad taste and odor.

Now after the 25 to 35 minutes are done check to see if the top is browned nicely. Remove from the oven and while still warm drizzle some vanilla frosting over the top.

That's it. Good luck trying to keep these around they were gone and I made six of them the first night!

Palm Beach Espresso Brownies (From that Skinny Chick)

I have been wanting to make a brownie with espresso powder in it, then I kept searching for a great recipe and my favorite baker +Liz Berg  from That Skinny Chick Can Bake  came up on the net first and I was thrilled to try it knowing they had to be awesome! Well they didn't fail me at all, actually they were fabulous and I want to thank Liz for this awesome recipe from 2010 when she first posted it! Go check her site out your going to love everything she makes!  I just adapted it a tiny bit.

Palm Beach Espresso Brownies (From that Skinny Chick)

8 ounces of bittersweet chocolate
2 - sticks of butter cut into pieces
5 large eggs
1 tablespoon strong coffee preferably espresso
1 teaspoon coconut extract
2  tablespoons instant espresso powder
3 1/2 cups sugar
1/8 teaspoon salt
1/4 cup brown sugar
1 2/3 cups flour

Optional Note below

Heat oven to 425 degrees. Line a 13x9 pan with parchment paper or heavy spray with cooking oil.  Melt the butter and the chocolate in the microwave stirring every 30 seconds until smooth around 2 minutes. 

In a large bowl beat the eggs, sugars, extract, coffee and espresso powder and using an electric mixer place on high for 10 minutes. Add the chocolate mixture to combine. Stir in the flour and salt (using  a spatula )only until blended.

Pour into a prepared pan and bake for 15 minutes. Lightly cover with foil and bake another 15 minutes.

Cool completely before cutting. Store in a tight covered container. 
Note: I drizzled melted german chocolate over the tops of these.

Salmon Florentine Artichoke Pasta

It doesn't get much better than any kind of fresh fish that you like with pasta, I am using salmon and a delicious pesto over rigatoni for a change of pace, then combined with some spinach and a little heat of red pepper flakes. A terrific blend of flavors for all the fish lovers out there.

Salmon Florentine Artichoke Pasta

3/4 pound salmon fillet or your favorite fish fillet
2 tablespoons prepared bottled or homemade pesto sauce
2 cups rigatoni pasta cooked to package instructions (we like al dente) 
1 tablespoon olive oil
1 (14 ounce) bag fresh baby spinach
3 cloves garlic, chopped
3 tablespoons chopped parsley
1/2 teaspoon crushed red pepper flakes, or to taste
ground black pepper to taste
1 (14 ounce) can artichoke hearts, drained
1/2 cup white wine
1/2 cup mushrooms
1/4 cup chopped red, green or yellow bell peppers
2 tablespoons prepared pesto or more
1/2 cup shredded Parmesan cheese
Preheat the oven to 325 degrees 

Coat salmon fillet with 2 tablespoons pesto. Place in a 9x13 inch baking dish.
Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.
Remove from oven and flake salmon into chunks, set salmon aside.

Cook rigatoni in boiling water to package instructions, stirring occasionally, still firm to the bite, about 11 minutes. Drain in a colander.
Heat olive oil in a skillet over medium heat. Add artichokes, mushrooms, spinach, peppers, garlic, cook until spinach is wilted, 3 to 4 minutes.  Pour in white wine and simmer until slightly reduced, 5 to 10 minutes.

Combine 2 tablespoons pesto, cooked vegetables and salmon add Parmesan cheese, and cooked pasta in the skillet and lightly toss until mixed, 1 to 2 minutes.  Serve with garlic knots, garlic bread or garlic pizza.

Amaretto Raspberry Scone Recipe

Here are two of my favorite flavors Amaretto and breakfast fruit combined, Amaretto and Raspberries! With them combined I just had the best of both worlds! You will be in heaven too if you love these two flavors. Fresh raspberries in a delicious scone almost cookie like in flavor with this buttery tasting frosting. These are the perfect treat when you have the need for a sugar fix!

Amaretto Raspberry Scone Recipe

1 tablespoon baking powder
2 cups flour
4 tablespoons sugar
1/2 teaspoon salt
6 tablespoons butter
1 cup heavy cream
1 tablespoon Amaretto liqueur
1/2 teaspoon almond extract
1/3 cup roasted sliced almonds
1 cup raspberries
Mix dry ingredients together with softened butter till crumbly. Add the cream then almonds, Amaretto and extract till blended. Fold in berries.
Make a round dough and cut like a pie. Bake at 350 till brown around 25 to 30 minutes. Drizzle icing and garnish with almonds while warm.

Heavy cream around 2 or 3 tablespoons or more as needed
1 cup powdered sugar
1 teaspoon Amaretto plus 1/4 teaspoon almond extract
Garnish sliced toasted almonds
Mix sugar and heavy cream and extract a little at at a time making a thin frosting. Add almonds.

Summer is a favorite time for me making fresh fruit desserts and raspberry was my Dad's favorite pie ,  a dessert I can only give him every tribute to.  Here  it is Dad,  this one's for you where ever you are. Missing you everyday and I always cook with you in mind R.I.P. until we meet again I know you would have flipped for this one. One of my best memories with dad was when he would work day shift at Ma Bell (aka ATT) he would walk to work and back(we only had one car and mom would work take it to her work) on the way home he would pick up a pie from a local store across the street from St. Louis Church to bring home a Freihofer's raspberry pie once a week. We would both sit down and eat the whole thing together, many years ago and I love that tradition he set with me and it became my favorite pie too!

Fresh Raspberry Galette Recipe

2 pie crusts store bought or homemade
2 containers or fresh raspberries or blackberries
1 jar seedless raspberry or blackberry jam
granulated sugar
heavy cream or beaten egg white

Roll out the dough and place the fresh berries in the center. Top with warmed jam (not hot) just to cover the berries of choice. Fold the edges to the center crimping to keep the middle open. Brush with cream or beaten egg whites then sprinkle generously with sugar. Bake at 400 degrees preheated oven until browned around 40 minutes.

Grilled or baked these are perfect to bring to any picnic! My mom always made her own sausage from scratch. She would make it in links. I just mixed and made the sausage mixture to put on skewers then baked them. Everyone went crazy over these and told me to never buy sausage in the store again! The easiest thing I ever made and go figure it's a huge hit. I have made the sausage many times but always took hours of stuffing it into casings not anymore this is a simple alternative and delicious!

If you can use all fresh vegetables this recipe,  it will be the best tasting stew you will ever eat!  Fresh zucchini, peas, green beans just to name a few are in this healthy wonderful crockpot all in a delicious tomato based sauce!

Slow Cooker Garden Zucchini Chicken Stew Recipe

4 boneless chicken breast cubed
2 cups each fresh or canned, green beans, peas, carrots, potato slices, zucchini cubed, mushrooms or any other vegetables you love.
2 chopped bell green peppers
28 ounce can of diced tomatoes or 2 pounds fresh pureed in the food processor
1 tablespoon each : garlic powder, oregano, salt, pepper, sugar, basil, parsley
1/4 teaspoon cayenne pepper
1/2 cup water
1/4 cup red wine any kind

Add everything in the crockpot, set on high for 6 to 8 hours.
Serve with Italian crusty bread. 

Note: for thicker stew add 2 tablespoon flour mixed with wine stir to make smooth paste and add 1/2 hour before done.
