Chocolate Chip Loaf
Yield: 12
A chocolate chip quick bread with NO BANANA in it!!
Ingredients
- 1/2 cup butter ( 1 stick)
- 1 teaspoon baking powder
- 1 egg
- 2 cups flour
- pinch salt
- 1 cup sugar
- 1 cup milk
- 1 teaspoon vanilla
- pinch of cinnamon
- 1 cup chocolate chunks
- Optional: add 1/2 cup coconut, walnuts or pecans to the batter
Instructions
- Preheat over to 350 degrees. Grease and flour a loaf-style pan.
- In a medium-size bowl using an electric mixer cream the butter and sugar together until light.
- Stir in the vanilla, egg, milk, and then add all dry ingredients until well blended.
- Fold in the chocolate and nuts if using..
- Bake in the 350-degree hot oven for around 55 minutes or until the toothpick comes out clean in the middle.
- Flip onto the wax paper after cooling for 4 minutes let cool completely before cutting.
