Meringue Cups Recipe
2 egg whites
1/4 teaspoon cream of tarter
1/4 teaspoon pure vanilla extract
pinch of salt
1/2 cup sugar
Beat the whites in a heavy duty electric mixer until soft peaks form with salt, vanilla and cream of tarter.
Once the peaks are formed start adding the sugar 1 tablespoon at a time.
The meringue is ready when the whites do not slide when tilting the bowl.
Using an ice cream round scoop, drop 6 meringues on the a silpat mat or parchment paper.
With the back of a spoon, make an indent in the center and keep the formation round.
Bake at 250 degree preheated oven for 35 minutes.
Shut the oven off and leave the meringues in for another hour before removing from the oven.
These will last 2 days in air tight container.
Filling suggestions: lemon curd, any flavor pudding, your choice of fresh fruits with whipped cream, Nutella with chopped hazelnuts and whipped cream, lemon curd with fresh raspberry, blueberry as shown.
