Tuesday, March 11, 2014
Well here is a perfect side dish with any meal who can resist bacon, potatoes, and cheese these Guinness Scallop Cheddar Bacon Potatoes.

This recipe is like hitting the potato jackpot.

I use them two ways, of course for a side dish on St. Patrick's Day but the other, you'll just have to read on.

If you happen to love Guinness Recipes try my other holiday dessert recipe to celebrate here.

Cheese and Potatoes

This is a recipe that there is no way not to love if you are a fan of cheesy potatoes.

The beer makes this side dish have that perfect blend of flavors especially if you love Guinness recipes.

We just love this dish with corned beef, smoked pork and any grilled meats.

Suggestions:

  • Use any kind of sharp cheddar
  • Always serve this hot
  • Spray the casserole dish heavily with a buttery flavored spray
  • For crispy cheese broil the top before serving and add extra Dubliner shredded cheese
  • Chopped hot or regular peppers are delicious if you're a pepper fan
  • Use Yukon gold potatoes or your favorite kind

My Second Favorite Potato Recipe

Well if you were reading earlier, I make this dish two different ways.

The other version of this which always is a hit at every party is simple.

Are you ready?

Ok, here it goes.

Boil the potatoes first to save time on the baking and getting them soft (and you can use any kind of potatoes, I love the Yukon Gold because they seem to cook faster).

After you boil the potatoes whip with milk and butter to make a looser style potato, salt, pepper them then just layer with the same ingredients in the recipe below.

If you do this boiling method first, mashed them and turn this same recipe into a dip!

I bring it to parties all the time and use tortilla chips, crackers and garlic pita toasted bread for dipping the potatoes with.

1/2 cup Guinness Beer

1/4 butter and 1/4 flour

1 teaspoon minced garlic

1/2 teaspoon garlic powder

dash of cayenne pepper

1 teaspoon of sea salt

1/2 teaspoon white pepper or use regular

1/4 teaspoon smoked paprika

1/4 teaspoon chili powder

1/2 cup chicken broth

1/2 pound Dubliner of extra sharp ( cheddar cheese)

1/2 cup heavy cream, half and half or whole milk

1 cup evaporated milk

1/2 teaspoon Worcestershire sauce

1 pound of bacon cooked until extra crispy for the top

3 pounds Yukon Gold potatoes thinly sliced (if you're making the dip, them just boil and mashed first adding some milk and butter to make them loose flowing)

1 cup shredded Dubliner Cheese for the top

Optional chopped red peppers

Make a paste with the flour and butter in a saucepan.

Heat and whisk until smooth. Add all seasonings. Stir to combine evenly.

Add the beer, chicken broth, and heavy cream stir till smooth. Add the cheese Worcestershire sauce.

Stir until all is melted.

In a large buttered baking deep casserole dish, add the potatoes on the bottom, cheese sauce, more potatoes and keep layering with cheese sauce until it's all in the casserole.

Add more cheese grated to the top.

Bake on 375 degrees preheated the oven for at least 70 minutes or more until the top is browned and cheese is crispy plus the potatoes are nice and soft when pierced with a fork.

Sprinkle with crumbled bacon when cooked ( we like the bacon crispy not soft so I do not add into the casserole.

Holiday

I make these every year for St. Patrick's Day as a dip instead of the casserole since we usually have the slow cooker corned beef and cabbage with Colcannon Potatoes.

If you're one to celebrate this green holiday, do try this recipe, it's great all year long and if you love St. Patrick's Day try my appetizer, Reubens!!
