This recipe is like hitting the Best Potato Recipe jackpot.


I use them two ways, of course for a side dish on St. Patrick's Day but the other, you'll just have to read on how could they are all year long and not wait for a holiday.

This is an easy recipe for any potato love and everyone that tastes this fabulous scalloped rich creamy sauce goes back for seconds!



The beer makes this side dish have that perfect blend of flavors especially if you love the addition of stout beers in recipes.



We just love this potato dish with corned beef, smoked pork, and any grilled meats.

  • Use any kind of sharp cheddar
  • Always serve this hot
  • Spray the casserole dish heavily with a buttery flavored spray
  • For crispy cheese broil the top before serving and add extra Dubliner shredded cheese
  • Chopped hot or regular peppers are a delicious addition if you're a pepper fan
  • Use Yukon gold potatoes or creamy white potatoes

Well if you were reading earlier, I make this dish two different ways.


The other version of this which always is a hit at every party is simple.

Ok, here it goes.


Boil the potatoes first to save time on the baking and getting them soft (and you can use any kind of potatoes, I love the Yukon Gold because they seem to cook faster).


If you do this boiling method first, mashed them leaving a few chunks, and turn this same recipe into a dip!


I bring the scalloped potato dip to parties all the time and use tortilla chips, crackers, and garlic pita toasted bread for dipping the potatoes with.

  • Guinness Beer
  • butter
  • flour
  • minced garlic
  • garlic powder
  • dash of cayenne pepper
  • sea salt
  • white pepper or use regular
  • smoked paprika
  • chili powder
  • chicken broth
  • Dubliner of extra sharp ( cheddar cheese)
  • heavy cream, half and half or whole milk
  • evaporated milk
  • Worcestershire sauce
  • bacon cooked until extra crispy for the top
  • Yukon Gold potatoes thinly sliced
  • Dubliner Cheese for the top
  • Optional chopped red peppers

I make these scalloped potatoes with bacon and cheddar every year for St. Patrick's Day as a dip instead of the casserole.



Just by adding more milk and chopping the potatoes up in chunks, it's really yummy with beer bread!



since we usually have the slow cooker corned beef and cabbage with Colcannon Potatoes.

Guinness Scalloped Cheddar Bacon Potatoes

A cheesy baked casserole made with Dubliner cheese and Guinness beer that's the perfect side dish with any smoked or grilled meats.

ingredients:

  • 1/2 cup Guinness Beer
  • 1/4 butter and 1/4 flour
  • 1 teaspoon minced garlic
  • 1/2 teaspoon garlic powder
  • dash of cayenne pepper
  • 1 teaspoon of sea salt
  • 1/2 teaspoon white pepper or use regular
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/2 cup chicken broth
  • 1/2 pound Dubliner of extra sharp ( cheddar cheese)
  • 1/2 cup heavy cream, half and half or whole milk
  • 1 cup evaporated milk
  • 1/2 teaspoon Worcestershire sauce
  • 1 pound of bacon cooked until extra crispy for the top
  • 3 pounds Yukon Gold potatoes thinly sliced (if you're making the dip, them just boil and mashed leaving in small chunks first, then adding some milk and butter to make them loosen flowing)
  • 1 cup shredded Dubliner Cheese for the top
  • Optional chopped red peppers

instructions:

How to cook Guinness Scallop Cheddar Bacon Potatoes

  1. Make a paste with the flour and butter in a saucepan.
  2. Heat and whisk until smooth. Add all seasonings. Stir to combine evenly.
  3. Add the beer, chicken broth, and heavy cream stir till smooth. Add the cheese Worcestershire sauce.
  4. Stir until all is melted.
  5. In a large buttered baking deep casserole dish, add the potatoes on the bottom, cheese sauce, more potatoes, and keep layering with cheese sauce until it's all in the casserole.
  6. Add more cheese grated to the top.
  7. Bake on 375 degrees preheated the oven for at least 70 minutes or more until the top is browned and cheese is crispy plus the potatoes are nice and soft when pierced with a fork.
  8. Sprinkle with crumbled bacon when cooked ( we like the bacon crispy not soft so I do not add into the casserole.
