When I was growing up mom always seemed to fry everything. I got away from it as I got older and wanted to bake everything.
Today I treated myself and went for frying. Yes, I know it's not the healthiest way to eat anything but I always go back to thinking how mom and dad lived well into their 80's and that's all they ate!
Today I made her famous easy cutlet recipe. I used canola oil and I made it caprese style. I know she would have loved what I did to this delicious friend steak if she was still here.
It's bursting with fresh flavors, the meat is tender as could be. You have to splurge once in awhile and I did today! Using canola oil is less fat. Drain them on paper towels to absorb the oil.
You can see by the easy video I took how fast this comes together. The egg, water, seasoned bread crumbs and meat of choice is all you need to get started making this a yummy meal.
I love using plum tomatoes and then the mozzarella with a touch of olive oil and vinegar. I used lemon juice today to make the photo look prettier. I prefer to eat this with an aged balsamic vinegar. It makes everything taste better, mine was 18 year aged and very sweet.
The smell still lingers in the house after you fry the meat and makes my mouth water even after I ate!
Steak Cutlet Caprese Pin for later
So go ahead and splurge! Mom used this using it on chicken, fish, cube steaks, venison and steak. I love them all.
I eat healthy all the time but thinking of mom today with her delicious cutlet recipe I just had to make it fried and it was a trip down memory lane.
If you do decide you prefer to bake them. Drizzle the cutlets with olive oil. Place on parchment paper and bake at 400 degrees until crispy. If they start to dry out a little add some white wine to keep them moist. Enjoy!
