- raspberry liqueur
- cream cheese frosting

- Optional: mini chocolate chips
- red colored sugar
- red raspberries whole for the tops
Tips
- Use sturdy paper liners
- Remember not to add liquid to cake mix package instructions
- Preheat the oven to 350 degrees
- Use a good grade white chocolate
- Do not overbeat the cake mix
- Warm jam over the raspberries makes them shine on top

This recipe is made by using a cake mix and doctored up to taste like they were made from scratch, the frosting is also canned with the addition of white chocolate. Easy, quick and so decadent!
ingredients:
- 1 cup fresh raspberries, pureed (more for garnish)
- 1 box (18.25 oz.) red velvet cake mix
- 1/4 cup seedless raspberry jam
- 2 tablespoon raspberry liqueur
- 2 can of (16-ounce size) cream cheese frosting
- 4 ounces of good grade white chocolate, melted
- Garnish:
- Optional: mini chocolate chips
- Red colored sugar
- Red raspberries whole for the tops
instructions:
How to cook Raspberry Red Velvet Cupcakes
- Heat oven to 350 degrees.
- Strain raspberries in a mesh style strainer then discard the seeds.
- Combine the puree with enough water to make 1 1/4 cups.
- Make the cake mix according to package directions, do not add the water.
- Add the puree water mixture, jam, and liqueur.
- Place into paper lined cupcake or muffin tins using an ice cream scoop to make them all the same size.
- You can also use 2 - heavily greased 9 x 9 round pans and do a layered cake.
- Bake 15 min. or until done.
- Let cool completely.
- In the meantime make the frosting.
- Mix the cream cheese frosting with melted white chocolate, together.
- Spread the frosting on cupcakes or layer cake or use piping tools for cake decorating on the cupcakes for decorations.
- If using whole raspberries for garnish, dip raspberries in some warm jam, add to the top of the cupcakes with red sugar sprinkled on top or mini chocolate chips.
