Blueberry Crumble Bars

These amazingly easy Blueberry Crumble Bars are so melt-in-your-mouth buttery delicious that you can't just stop at one!


These quick decadent crumble bars with a slightly sweet filling are so simple to make and can be a year-round treat anytime since they freeze so well and just keeps you coming back for another bite.


I have never made a batch that didn't all fly off the plate the same day and you can use fresh or frozen blueberries for this recipe, so when blueberries are on sale we buy large quantities and freeze them for another time.


Seriously one of my favorite bars of all time I really was excited to share the recipe with everyone because you just have to try them to believe me.


I no longer wait for the blueberry season to make these bars, I make sure I have a stash in the freezer and use them in a pinch so I can indulge all year long.


We love blueberry desserts, blueberry muffins, blueberry cookies,  blueberry flan, blueberry cheesecake bars, and blueberry lemon loaf are among our favorites.


If you really want another idea for these as a dessert, top the bars with some homemade ice cream, whipped cream with a few extra blueberries, and turn them into a cobbler-style treat!

Blueberries can easily stain, so I always use parchment paper to avoid that happening.


It also keeps the pan clean and just like new!

  • The crumble topping the day after will be softer but still delicious
  • Store leftovers in the refrigerator
  • These bars freeze well for 3 months

Blueberry Crumble Bars

Blueberry Crumble Bars

These are a crumble-style bar with fresh blueberries and a cookie crust. The crust is very buttery and similar to shortbread cookies.

Ingredients

  • Blueberry filling
  • 2 cups fresh blueberries ( you can use frozen but blot dry)
  • 2 teaspoons cornstarch
  • 1 tablespoon freshly grated lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup white sugar
  • 1/4 teaspoon allspice or cinnamon
  • Mix the above ingredients and set aside while mixing the shortbread dough.
  • Cookie Dough and Topping
  • 1 and 1/4 cups flour
  • 1/2 cup white sugar
  • 1/2 teaspoon baking powder
  • 1 stick of butter softened plus 2 tablespoons
  • 1 egg yolk
  • Additional Ingredients for Reserved Dough
  • 1 cup reserved dough from the above recipe
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 375 degrees.
  2. Prepare a 12 x 6 brownie-style pan or 9 x 9 square and line it with parchment paper. Set aside.
  3. Mix the butter, sugar flour baking powder, and egg yolk together with a pastry blender or fork, saving around 1 cup of dough for the top.
  4. Press 2/3 of the dough into a 12 x 6 rectangular pan or 9 x 9 square pan that has been lined with parchment paper.
  5. In the bowl with the reserved dough saved, knead in the 2 tablespoons of brown sugar evenly into the dough.
  6. Pour the blueberry filling. the mixture on top of the dough-lined pan.
  7. Dough reserved topping with small little pieces evenly (as shown in the photos), then place in the preheated oven.
  8. Bake at 375 preheated oven for around 35 to 45 minutes depending on the size pan or until golden brown on top.
  9. Cool completely and cut into bars.
  10. I store any leftovers in a covered plastic container in the refrigerator and let them come to room temperature.
