Tips

  1. always use room temperature cream cheese or whipped for easy spreading
  2. season the pork with salt and pepper when it's raw
  3. preheat the oven 
  4. for extra crispier bacon only use thinly sliced
  5. use butchers thread or toothpicks to hold pork shut
  6. always cook rolls seam side down
  7. chicken, turkey, or thin pounded steaks, can be substituted

Easy Stuffed Pork Rollups

Easy Stuffed Pork Rollups

These are really easy pork roll-ups stuffed with ham, whipped cream cheese herbs, and cooked in an apple juice bath. Easy to make and elegant to serve.

Ingredients

  • 2-pounds Pork Tenderloin cut into thin strips lengthwise ( around 8 strips cut 1/4 inch thick slices and 6 to 8 inches long or use boneless center-cut thin pork chops pounded 1/4 inch thick 
  • Note: you can also use thin steak, chicken, or venison steaks
  • 1 - 8 -  ounce container whipped cream cheese
  • 8 thin slices of applewood bacon
  • 8 slices of black forest ham or another deli meat 
  • a medley of chopped fresh herbs, parsley, basil around 1/4 cup freshly chopped or use  1  tablespoon Italian seasoning dried
  • granulated garlic to sprinkle over each roll-up
  • olive oil and butter melted together around 1/4 of a cup 
  • Italian flavored breadcrumbs
  • 1 snack cup size 4 ounces of applesauce
  • 1 cup apple juice or white wine
  • salt, pepper to taste
  • butchers thread or use toothpicks to hold them together
  • Pecorino Romano grated cheese

Instructions

  1. Prepare and oil spray (or line with parchment paper) a 13 x 9 casserole dish then set aside.
  2. Slice the pork tenderloin into long 1/4 inch pieces on a cutting board.
  3. Spread each one with whipped cream cheese.
  4. Sprinkle with granulated garlic powder, salt, and pepper.
  5. Add a few fresh herbs to each piece, then a slice of ham on top.
  6. wrap each roll of pork in bacon.
  7. Roll and fasten with either toothpicks or butcher's thread.
  8. Place into the prepared pan.
  9. Sprinkle with Italian breadcrumbs and cheese.
  10. Drizzle butter and olive oil over the top.
  11. Pour the juice or wine on the bottom with applesauce.
  12. Bake at 375 degrees for 35 minutes or until the bacon is crispy.

  18. How wide are the rolls? I bought pork scallopini to use for this but didn't think each strip would only be 1/4" wide. A bacon strip is wider than that. The thickness of my pork is about 1/4". Was that what you meant?? I wanted each roll up to be about 4-6" wide when rolled up.

    1. Hello Kathy, I get a pork tenderloin around 3 pounds and slice it lengthwise into strips. It's around 6 to 7 inches long and I also would adjust the bacon to fit you can use what you have they will be smaller. Just cut the bacon to fit with a cooking scissors. Trim it to fit. Hope that helps. That is fine the width also.
