  4. add some red pepper flakes or chopped raw long hot peppers
  5. use fresh herbs when available instead of dried
  6. Always use slices of cheese not shredded for the best results and whole milk mozzarella

Here is a quick and easy way to make a mini deep dish pizza using store-bought ingredients or homemade ready in minutes to satisfy that pizza craving!

Ingredients

  • 1 pound of store-bought pizza dough or Homemade Pizza Dough cut into 12 even-sized pieces
  • 1 - 12 to 15 ounce can of store-bought pizza sauce or Authentic Homemade Italian Pizza Sauce
  • 12 slices of whole milk mozzarella cheese
  • Pecorino and Parmesan blended grated cheese
  • Cooking spray or olive oil brushed on the muffin tin
  • Optional: oregano, fresh chopped basil, red pepper flakes, granulated garlic powder or finely minced fresh garlic, freshly chopped Italian flat-leaf parsley
  • See notes for Topping suggestions
  • Note: To make a filled deep dish mini pizza cut the ball in half to make 24 pieces and roll out to fit the muffin tin to have a top and bottom. Fill and bake.

Instructions

  1. Preheat the oven to 400 degrees and spray the muffin tin with cooking oil spray.
  2. Let the dough get to room temperature for at least an hour.
  3. Cut the dough into 12 balls (24 pieces for a top and bottom filled pizza)
  4. Flatten the dough to fit each muffin tin and form up the sides with your fingers.
  5. Let them rest for 30 minutes but only let them rise a little bit (20 to 30 minutes).
  6. Add pizza sauce and any of the minced toppings of choice to the sauce on the dough.
  7. Sprinkle each with a little grated cheese.
  8. Add any oregano or spices you prefer before topping with cheese.
  9. Top with a slice of mozzarella cheese.
  10. Bake until the cheese is brown and bubbling around 20 to 25 minutes.
  11. Note: for a crispier crust, bake without cheese first for 10 minutes. Then add the cheese and continue baking for 20 more minutes.
  12. If using fresh basil, top the pizza before serving.
  13. For making the top and baking crust: flatten both pieces thin around 1/4 inch. Add the bottom dough to line the muffin tin. Fill with sauce toppings and cheese. Place the flattened top crust on top. Crimp edges. Brush with olive oil and bake until the crust is a crispy golden brown around 35 to 40 minutes.
