Maple and Brown Sugar Glazed Carrots will jazz up plain carrots with this super easy slow cooker side dish that literally goes great with any kind of meal you make.

Making carrots in the slow cooker is perfect for that big meal during a holiday dinner as it will free up your oven, stove, or even the microwave when there are several dishes being served you need space for.

Also if you've been asked to bring a side dish to an invited dinner or holiday, these carrots are perfect as they stay warm and you can enjoy the day without fussing over a stove or worrying about having space to heat up your food!

Perfect for those gluten-free or vegetarian lovers as well in the family!

I like the fact these can be made ahead of time during the busiest days and stay perfectly in the fridge reheated for up to 3 days.

There are ever substitutions and additions you can make for picky eaters that aren't fond of carrots like pumpkin, butternut squash, acorn squash, or even sweet potatoes.

Step By Step Slow Cooker Maple Glazed Carrots

  1. peel and slice the carrots if using fresh (you can purchase them presliced in a bag in the produce department)
  2. sprinkle with the seasoning
  3. toss the carrots with syrup
  4. set the slow cooker to high
  5. test them around 2 1/2 hours (depending on thickness and the vegetables you added more time can be needed)
  6. cook till they pierce easily with a fork
  7. serve in a pretty dish
  8. optional:(add a streusel topping if you wish made ahead of time)
  9. keep on warm until serving

Tips and Topping Suggestions


  1. Carrots are a hard vegetable and take longer to cook than others make sure you test them at 2 1/2 hours for a slice and around 3 hours for fingerling, continue to cook them as you prefer. Just reheat in the microwave or oven if you make these ahead of time
  2. Chopped-up fingerling carrots will cook quicker
  3. Substitute any kind of sugar-free sweeteners IE: stevia and syrup and any kind of sugar-free syrups
  4. For best results for the thickest glaze remove just the syrup from the slow cooker and pour just the syrup into a small saucepan boil until it thickens 
  5. butternut squash cubed, pumpkin, sweet potatoes carrots can all be used together and cut into small pieces 
  6. Freshly grated ginger and freshly grated nutmeg add a nice flavor 
  7. Use a crinkle cutter to make fancy-looking root vegetables (see the tool at the bottom)
  8. Not a fan of carrots try another vegetable you prefer or even sweet potatoes as a change
  9. Make an apple cinnamon oatmeal topping to add a few minutes before serving and sprinkle it on the carrots just before they're done recipe is included in the printable recipe card below
  10. Store leftovers for up to 3 days and they will freeze in a container for up to 4 months

Easy Cooking Methods for Carrots

  1. Boiled: cut the carrots or other vegetables into small cubes (boil with skins off) add fingerling carrots for around 15 minutes with all the ingredients and simmer until the syrup thickens
  2. Microwaved: place sliced carrots in a microwave-proof bowl, and microwave for around 11 minutes or until carrots are completed cooking ( I usually add around 1/4 cup of apple juice to ensure the steam cooks them all the way through)
  3. Roast: Place the cubed carrots (and/or other root vegetables using) on a baking sheet tossed or oil sprayed with cooking oil make the syrup on the stovetop and boil until thickened then pour over the carrots

These carrots are an economical recipe that's perfect when you're stuck on what side dish to make.

Our maple-glazed carrots are one of everyone's favorites the flavors meld together perfectly for just about any cooking method.

Today we try them slow-cooked and brought them to an unexpected dinner invitation and they were a huge hit.

One of the best parts besides eating these is a slow cooker frees up my time to enjoy the company and I didn't have to worry if there was a spot on the stove for keeping this dish hot!

The slow cooker did all the work and it was an enjoyable evening.

Plus you can make as much as you want but I must warn you, these will be gone in a New York minute so double the recipe!

If you ever get stuck having to bring along a side dish to a potluck or holiday dinner these are going to be the star of the event.

Not only easy to make but perfect for a busy life schedule as the slow cooker does all the work for you.

Again you can mix and match and add, butternut squash, sweet potatoes, and carrots and make it a threesome for everyone who is picky will have a choice!

If you decide to make the topping, with the apple oatmeal crumble the taste is just like a dessert side dish.

Jazz up plain carrots super easy with this delicious maple buttery glaze coating all done in a slow cooker

Ingredients

  • 1 1/2 pounds sliced carrots or fingerling carrots (cubed acorn squash, pumpkin cubed, butternut squash, or sweet potatoes, they can also be combined)
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 2/3 cup pure maple syrup (you can also use pancake syrup, honey, or corn syrup)
  • 1/4 teaspoon maple extract or vanilla extract
  • Note: recipe can be doubled

Instructions

  1. In a 4 or 5-quart slow cooker, spray the inside with cooking oil spray then add the carrots..
  2. Add the ground cinnamon, salt, and brown sugar stirring to blend evenly
  3. Coat the carrots using a spatula with the maple syrup until evenly coated.
  4. Spread the coated carrots out evenly in the slow cooker then dot them with butter
  5. Turn the cooker on high for around 4 hours if fingerling carrots, and 3 for slicing.
  6. Note: these can also be cooked on the stovetop simmering on low until the carrots are fork-tender.
  7. Place the syrup in an oven-proof baking dish and bake the syrup until it thickens at 400 degrees around 15 minutes, then add the carrots back in.
  8. This can also be done on the stovetop in a small saucepan (removing the carrots until it thickens on a low simmer)
  9. Apple Cinnamon Oatmeal Topping which is optional:
  10. 1 small granny smith apple grated super fine
  11. 1 tablespoon butter softened
  12. 2 tablespoons oatmeal
  13. 1 tablespoon brown sugar
  14. Mix together until crumbly add to the top of the carrots 15 minutes before they are done in the slow cooker with the cover on just until the butter melts.
