Doctored Cake Mix Easy Steps Making Red Velvet Cookies

  1. preheat the oven and line two baking sheets with parchment paper
  2. mix the butter with eggs then add vanilla
  3. add the cake mix
  4. chill for easier rolling
  5. shape with a cookie scoop
  6. bake, coo. and lfrost

  • roll the cookies into balls by hand with powdered sugar or flour 
  • use a cookie scoop for uniform-sized cookies
  • store these in airtight containers
  • cool completely before frosting

Red Velvet Doctored Cake Mix Cookies

Red Velvet Doctored Cake Mix Cookies

Red Velvet soft cookies made with a doctored cake mix recipe

Ingredients

  • 1/2 cup butter, room temperature (1 stick)
  • 1 - 3/4 cups of AP flour
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 - box of red velvet cake mix (15.25 ounce size)
  • Optional:1/2 cup mix-ins: chocolate chips (I use semi-sweet, milk, or white chips) 2/3 cup chopped walnuts or another kind you prefer (for nut allergies use pumpkin seeds or sunflower seeds) white cream cheese frosting or chocolate frosting homemade or canned

Instructions

  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
  2. Using an electric mixer beat the butter and eggs until blended.
  3. Beat in the vanilla to egg to that mixture.
  4. Add the cake mix and beat until smooth.
  5. Fold in any mix-ins.
  6. Tip: Chill the batter for easier rolling around 1 hour.
  7. Note: use powdered sugar for rolling instead of flour.
  8. Using a cookie scoop for uniform-sized cookies, drop them into powdered sugar onto the cookie sheet.
  9. Bake the cookies for around 10 to 12 minutes or until the edges start to brown.
  10. Cool before removing from the parchment paper.
  11. Dust with more powdered sugar leave, them plain or frost them with cream cheese icing.
  12. Cream Cheese Icing:
  13. 2 cups powdered sugar
  14. 1 8-ounce package of cream cheese softened
  15. 4 tablespoons marshmallow fluff
  16. Beat all together until smooth and the desired consistency is reached for spreading.
  17. Chocolate Frosting:
  18. 3 cups powdered sugar
  19. 1/4 cup dark unsweetened cocoa powder
  20. 4 tablespoons butter softened
  21. 2 tablespoons shortening
  22. 1/4 cup milk or more
  23. 1 teaspoon vanilla extract
  24. Pinch salt
  25. Beat all together until smooth and the desired consistency is reached for spreading.
