Roasted Garlic Dip

Roasted Garlic Dip

Roasted Garlic with a hint of lemon in a creamy sour cream dip. This is great served with a variety of bread and crackers and also a delicious spread on baked chicken and fish.

Ingredients

  • Roasting the Garlic Bulbs Ingredients:
  • 3 heads of garlic
  • 2 teaspoons olive oil
  • salt, and pepper to taste
  • Dip Ingredients:
  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 1/4 cup grated Parmesan, Pecorino Romano blended cheese
  • Salt, pepper, and a pinch of red pepper flakes are optional to taste
  • parchment paper or foil
  • Note: if using parchment paper, fasten with butchers' cooking ties (you can find them online)

Instructions

  1. Preheat the oven to 400 degrees to roast the garlic.
  2. Place the garlic heads on parchment paper, drizzle with olive oil, and season to taste with salt and pepper.
  3. Fold to seal the garlic bulb using butcher's cooking ties or twine, or then just place the garlic folded side down in a baking pan.
  4. Note: You can also use foil if you prefer and just seal it tightly.
  5. Roast the garlic for around 45 minutes or longer, depending on how large the heads are.
  6. Remove and cool for around 15 minutes.
  7. The skins should easily come off when you squeeze the garlic.
  8. Please the garlic with its skins removed in a serving dish and mash it with a fork.
  9. Add all the dip ingredients, mix to blend evenly, then refrigerate covered for around 3 hours.
  10. To serve, refer to the suggestions under the notes below.
  11. For use on meats such as chicken and fish, spread on top of boneless chicken breast or fish bake chicken at 400 degrees for around 25 minutes or until the internal temperature reaches 165 degrees or fish is cooked at 145 and takes around 11 minutes.
