Alternative Seafood
- Cod (similar texture and mild flavor)
- Halibut (firmer and slightly richer)
- Tilapia (budget-friendly and mild)
- Flounder or sole (delicate and thin fillets)
- Grouper (firm fish, flaky)
- Chilean seabass (mild and buttery)
- Scallops (sweet and tender, great for a more upscale feel)
- Crab meat (adds richness and a slightly sweet flavor)
- Lobster chunks (perfect for special occasions)
- Langostino (a milder, lobster-like option)
Tips
- Choose Fresh or High-Quality Frozen Seafood: Fresh haddock and shrimp will yield the best flavor, but properly thawed frozen options work just as well.
- Pat the seafood dry before cooking. Removing excess moisture helps the fish bake evenly and allows the sauce to cling better.
- Use a Dry White Wine. Opt for something like Sauvignon Blanc or Pinot Grigio for a clean, balanced flavor.
- Don’t Overcook the Shrimp. Shrimp cooks quickly-add it at the right time to keep it tender and juicy.
- Season lightly but effectively. Salt, pepper, garlic, and a touch of lemon enhance the natural seafood flavors without overpowering them.
- Finish with Fresh Herbs Parsley or chives, which add brightness and a pop of color to the final dish.
- For spicy, add some hot sauce to taste or more cayenne pepper
- For those allergic to seafood, substitute chicken breast
- For a low-fat version, use all chicken broth or lemon juice, not wine
- This dish can be served with a side of spaghetti, also drizzled with the wine butter sauce
- Use a bed of spinach or escarole cooked with the fish on top for a different side dish
