Baked Scallops Escargot Style

If you're a fan of escargot, this is pretty close to that same buttery wine-infused recipe except a little more economical using scallops but with the same great taste!

These scallops make the best appetizer before a big meal for any seafood lover and they are so quick and easy to make but with a big gourmet taste!

Of course, you can certainly substitute scallops with shrimp or another shellfish you prefer but when using the escargot dishes, scallops will fit perfectly in each well.

This dish will even impress your guests when you host a dinner party and we often make this as an appetizer especially around the Christmas Eve holiday when we celebrate the Feast of 7 Fishes.

Our Baked Snook recipe, is one of the most delicious buttery-baked meaty white fish on the planet.

Snook is not only a culinary delight in flavor it's also a highly prized game fish due to its aggressive fighting ability.

This wonderous fish is excellent for eating and if you have the chance to live in areas to catch one to enjoy add this recipe to your seafood collection.

There are only certain time slots out of the year you're allowed to fish for this kind of fish and the rules have very strict catch limits for size restrictions so be aware of when fishing for one for all beginners out there.

We have several ways you can prepare snook, it is so versatile no matter if you love fish pan-fried, baked, or air-fried using some of our flavorful coatings or just leaving it plain dressed with herbs it will be a homerun meal.

Included in our recipe card will be several suggestions on how to prepare this fish to make a memorable meal you'll never forget that will leave you wanting to have more and being a new favorite for seafood lovers.

There are five different species of snook fish in Florida where we catch them, and all of them can be found in brackish and freshwater.

We usually use a small baitfish to catch snook called mullet and it works very well.

Living in Florida we have been pretty lucky to have caught them by just surf fishing at the ocean, but there are several areas where snook is plentiful to catch in season and certain parts of the year in many other canals and fishing areas.

With a few simple ingredients, this gourmet snook can be on your tables in around 30 minutes and will be a wonderful addition to your seafood recipe collection like our Lemony Herb Mahi Mahi we'd love for you to try.

This recipe will make your mouth water while it bakes, the aroma is fabulous.

When we lived and fished in Central N.Y. years ago before moving to Florida, we would catch a northern fish called walleye, and the snook in our opinion is comparable in taste and texture.

Dirty Seafood in Spicy Butter Beer Sauce

This Dirty Seafood with Spicy Butter Beer gets its name from the delectable addictive buttery sauce that coats a medley of seafood plus it's a tad bit spicy.


Today we've added shrimp, scallops, and calamari rings, and it's off the charts in flavor and the perfect light summer meal!


The spiciness comes from cayenne pepper, and smoked paprika and can be served on top of mixed greens, filling fish tacos, topping cooked pasta,  or added to a  red bean and white rice combo.


The garlic butter beer and herb sauce takes only around 15 minutes and is super easy to make


Of course, we have other substitutions for those with seafood allergies using this same sauce with another alternative like chicken, they all taste great in beer sauce also.

Baked Haddock and Scallops with Lemon Butter Dill Sauce

Baked Haddock and Scallops in Butter Dill Sauce taste like it came from a 5 star restaurant and super simple to make in your own homes!


The lemon butter dill sauce combination really complements any kind of fish you use, and the only sauce you'll want to use after one taste.


I just love making this for friends and family dinners it's really a show stopper with the colorful peppers and tomatoes added for a side dish.


The fish is moist and flaky and the buttery lemon sauce on top after it's cooked compliments this dish but can be used on any fish you like.


The addition of scallops on top with the toasted breadcrumbs are all baked to perfection just by sprinkling them on top, no fussy dipping or flipping the fish.

Italian Crab and Shrimp Cake Appetizer

Crab cakes are a popular seafood appetizer in Maryland where they were discovered in 1930, by Chef Crosby Gaige.

He actually introduced them in his cookbook the New York World's Fair Cook Book called Baltimore Crab Cakes.

The cakes are famous all over the surrounding areas of Maryland and Virginia where the crabbing industry thrives.

This recipe is more adapted to my own version of how I like the taste of crab cakes so not the original recipe.

I first tasted these on a cruise ship for the and fell in love with the flavors and these are a close copycat just not as pretty as theirs but absolutely delicious!

I love seafood and the ones I loved had a mixture of shrimp and lump crab in them served with a lemon butter sauce which is the recipe I wrote below.

I have to admit these are about spot on from the memory of what they tasted like and for those out there with fish allergies you can substitute the fish for cooked shredded chicken breast.

I love to recreate by remaking Copycat Recipes it's a fun adventure for me.

Italian Christmas Eve

The Feast of the Seven Fishes is part of the Italian-American Christmas Eve celebration, in Italy, it's not called a feast but it certainly is pretty much the same and they refer to this name as a "Grand Meal" for their Christmas celebration dinner.

Christmas Eve is a fasting day for any kind of meat, and only seafood is served (actually several kinds of fish is made on this day) as part of the menu.

This Italian Christmas Eve Tradition of no meat continues to stay true to an Italian American seafood feast we serve her in America.

The seafood is part of Catholic abstinence from eating meat until the feast of Christmas Day.

The "Grand Meal" (feast) consists of seven different seafood dishes and traditionally was started in Southern Italy, and known simply as The Vigil (La Vigilia).

This celebration was to wait and welcome the Vigilia di Natale, and the birth of baby Jesus.

The seafood for Roman Catholics typically is fried fish in oil and shellfish that they could afford and was freshly caught.

Among the fish were clams with pasta which we add to Cioppino which is a fish stew, a salted codfish called baccala being the most popular to serve which is a codfish in a tomato sauce or squid, white fish, and several others that were fried.

In some of the oldest Italian American families, there was no count of the number of fish dishes that were served this Christmas Eve night.

Fried smelts and other types of seafood like Calamari fried were introduced into the menu much later through the years on Christmas Eve.

Christmas Eve is celebrated with 7 fishes in our home.

Fried smelts is just one of the many fish we cook.

There are seven Traditional fried, baked, and raw fish we eat as a family.

Born and raised in America, my parents continued the Rome and Bari traditions every Christmas Eve.

For our traditional Christmas Eve and Christmas Day we have no meat until the morning baby Jesus was born.

Also, smelt is usually fried whole, but last time I fried them there was something in the heads that seemed quite gritty, so I decided to cut the heads off this time.

Absolutely our favorite seafood here in Florida, these little gems taste a lot like lobster!

Florida Rock Shrimp is the perfect shellfish here.

Rock Shrimp are sweet and the best thing that's the closest taste to lobster.

Their bodies are rock hard when cooked and dipped in butter they taste like little lobster tails!

Dipped in herb butter just broiled after cleaning is my favorite way to serve these.

The Feast of the Seven Fishes is eating fish that night for their Christmas Eve celebration dinner.

Christmas Eve is a fasting day and the customs and respect given it to abstain from eating any meat that day until Christmas Day.

This Italian Christmas Eve Tradition has always been practiced by our family here in America.

Seafood is part of Catholic abstinence from eating meat until the feast of Christmas Day.

This celebration was to wait and welcome the Vigilia di Natale, and the birth of baby Jesus.

When the clock strikes 12:00 am everyone gathers in our family for Midnight mass and prayer for our baby Jesus as it has been written that was the time of his birth.

Although the tradition is 7 Fishes, we usually have more than 7 with the medleys we serve in the meals along with the Insalata Caprese and Italian Struffoli dessert.

Our Grilled Italian Style Mahi Mahi with Lemon Herbs is a quick and easy way to prepare fresh-caught seafood but don't worry you can use frozen-thawed fish also for this recipe.

Mahi-Mahi is one of the most perfect fresh-caught seafood because it holds up so well for grilling because of its firm texture and won't fall apart.

It is also has a very mild flavor and not a fishy strong taste and the perfect first seafood to try for those opposed to liking any kind of fish.

As a bonus, we included oven-baked, an air fryer method, and pan-fried for those who don't have an outdoor grill, so no problem our instructions provided alternatives.
