When I think of Jambalaya, I think of a pan of a delicious assortment of my favorite meats, seafood, and vegetables.


I made mine more of a Cajun/Italian style in flavors and it not only packs a punch it's addicting not to stop eating it.


Whether you love chicken, steak, seafood, or sausage, this is a great one-pan meal to serve and perfect for getting everything together for side dishes and your main meal cooked all together.


Served normally with a bowl of dirty rice, or red beans and rice, this Italian style jambalaya has all the best of our favorite vegetables in a casserole that needs nothing else.


Two kinds of potatoes, mushrooms then shrimp and sausage, the flavors together are outstanding.


We are big fans of easy meals, and all casseroles, this is great outdoors if you have a wok pan with holes in it to put on the grill also.

What is Jambalaya?




This classic southern recipe is brimming with three proteins including tender shrimp, chicken, and sausage, and it’s cooked with hearty rice and a colorful array of nutritious vegetables.



And it’s all seasoned with flavorful cajun spices.



Mine is made with assorted vegetables, seafood and sausage all in one-pan and a whole meal in itself.



I usually don't make rice as the additional traditional meal because there is more than enough sides with the corn, potatoes, and mushrooms added.



Jambalaya is a famous New Orleans dish with Spanish, French, and African influence (inspiration coming from dishes such as paella, Jollof and jambalai).



It's a one-pan homestyle dinner with a rich history of flavors.



Most commonly it consists of andouille sausage, chicken or pork, and seafood such as shrimp or crawfish.



You can adapt this recipe with whatever ingredients you prefer.












Ingredients You Will Need


  • Italian sausage 4 or 5 links
  • Fresh corn cobs shucked cut into small pieces
  • Cleaned peppers red and green
  • Sliced fresh sweet potatoes
  • Sliced white potatoes
  • Whole baby Bella mushrooms or more
  • Olive oil around 1/4 cup or use butter
  • cajun seasoning
  • chili powder
  • Italian seasoning
  • granulated garlic powder
  • white wine ( I use pinot grigio)
  • salt, pepper and cayenne pepper to taste
  • wooden skewers soaked in water
  • parchment paper or just oil spray
  • Optional: sliced onions, large shrimp with tails off, large scallops, chicken breasts boneless cubed ribeye steak, cubed boneless pork, any other kinds of sausage links, like kielbasa.

Original Style Jambalaya Recipe With Rice:



this is a large pan of Jambalaya rice



Ingredients for Old Fashioned South Jambalaya

  • 4 tablespoons olive oil, divided
  • 2 boneless skinless chicken breasts, cut into cubes
  • 1 pound andouille sausage, thinly sliced into rounds
  • 3 small bell peppers any color
  • 1/2 cup celery, diced
  • 1/2 cup jarred jalapeno peppers, or use 1 fresh seeded and finely chopped
  • 1 white onion, diced
  • 4 cloves garlic, peeled and minced
  • 1 (28-ounce) can crushed tomatoes
  • 3 cups chicken stock
  • 1 1/3 cups uncooked long-grain white rice
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme, crushed
  • 1/4 teaspoon cayenne pepper or more to taste
  • 1 bay leaf
  • 1 pound raw extra-large shrimp, peeled and deveined
  • 1 cup okra ( used frozen)
  • salt and freshly-cracked black pepper to taste
  • Optional Garnishes: chopped fresh flat-leaf parsley, Louisiana style hot sauce

Instructions


Heat the oil in a deep pot that will accommodate all the ingredients.

Saute the meats for around 8 minutes on each side in 2 tablespoons oil. Remove from pot and keep warm.

Add a few more tablespoons of oil to the pot along with peppers, celery, onion, garlic and stir fry it until for around 3 minutes.

Stir in tomato, stock, rice, seasoning, and rest of the herbs and spices to taste along with salt and pepper.

Simmer for 39 minutes or until rice is cooked however you like it.









Italian Style Jambalaya

This is a one-pan meal with shrimp, sausage, two kinds of potatoes, corn on the cob, whole mushrooms, and pepper. You can add more or less whatever you like but this one-pan meal is like a picnic in a pan! This has a kick of cajun and Italian spices.

Ingredients:

  • Italian sausage 4 or 5 links
  • 2 Fresh corn cobs shucked cut into small pieces
  • 2 or 3 cleaned peppers red and green 
  • 2 or 3 sliced fresh sweet potatoes 
  • 2 or 3  sliced white potatoes
  • 8-ounce package of Whole baby Bella mushrooms or more
  • Olive oil around 1/4 cup or use  butter
  • 1 teaspoon cajun seasoning 
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon granulated garlic powder
  • 1/2 cup of white wine ( I use pinot grigio
  • salt, pepper and cayenne pepper to taste
  • wooden skewers soaked in water
  • Line a 13 x 9 baking pan with parchment paper or just oil spray your pan.
  • Optional: sliced onions, large shrimp with tails off, large scallops, chicken breasts boneless cubed ribeye steak, cubed boneless pork, any other kinds of sausage links, like kielbasa.

Instructions:

  1. Thread the mushrooms to soaked skewers, along with shrimp or cubed chicken.
  2. Note: I do them all separately for those who aren't shrimp lovers.
  3. Place the oil-coated and seasoned sweet and white potatoes in the pan first.
  4. Top one side with threaded shrimp or chicken skewers and the other side top with the sausage using.
  5. Toss the potatoes in the oil or butter with all the seasonings in a bowl and pour on the parchment-lined 13 x 9 pan.
  6. Add the peppers on top of sausage.
  7. Sprinkle evenly with more spices on top.
  8. Pour wine in the pan.
  9. Bake at 400 degrees for around 1 hour or until everything is soft and sausage is browned.
  10. Serve with baked beans, cornbread if you want some side dish suggestions.
