Apple Zucchini Bread

This Apple Zucchini Bread is the perfect fall loaf of sweet moist bread for breakfast.

As soon as the season for apples hit the market and zucchini is still in abundance at the farmer's market, we enjoy this when that first snap of cooler weather starts.

The aroma of these fall spices is intoxicating throughout the whole house as this loaf is baking.

Thinly sliced apples and shredded zucchini baked to a crispy outside and moist tender bread like cake inside, are irresistible in combination.

This thick batter bakes up high and is perfect for those high muffin tops and making mini loaves for the holiday season for gift giving.

I absolutely love this recipe Grandma handed down, and through the years, we continue to celebrate her life in every bite with wonderful childhood memories of her baking skills.

The best part is the recipe has simple pantry ingredients and mix by hand in a matter of minutes, cooled, and as a snack cake any time of the day including breakfast.

Chocolate Zucchini Coffee Cake has tons of chocolate flavor in every slice and a decadent coffee cake perfect anytime of the day.

Ultra rich, moist, and fudgy chocolate cake is the perfect dessert all year long not only during the summer but using frozen shredded zucchini blotted dry will work!

Although leaving this cake plain dusted with powder sugar tastes great, I am hooked on a chocolate ganache or a drizzle of chocolate icing.

For hosting a dinner party I often make a streusel topping before baking.

Our versatile recipe isn't overly sweet, so if you do have a sweet tooth I recommend adding one of our topping suggestions from our recipe card.

Using all simple pantry ingredients this recipe can be baked in bundt pans, cake pans, cupcakes, or mini loaf pans, and perfect for gift giving since they freeze perfectly so you can make several ahead of time to have on hand for the holiday season.

This batter is even super easy to mix up quick and we even have many additions you can add to it to change this cake into a different zucchini cake every time you make it.

We even love this cake with a dollop of freshly whipped cream drizzled with Kahlua Hot Fudge Sauce, the possibilities are endless!

What better way to use fresh tomatoes than with this healthy delicious baked zucchini tomato tart?


It's great for breakfast, brunch, or lunch.

Add some grilled chicken or meat and this also makes a great side dish.


This tart really goes with anything and anytime.


We really love it as it is light for the summer months and since we have a beautiful garden and grow our own tomatoes and zucchini this is a win-win to enjoy the fruits of our labor!


When you serve this to friends and family, don't be surprised they think it took all day for you to do and more gourmet than just a usual tart to serve.

Easy Baked Zucchini Lasagna is a great summer casserole and there are several varieties of fillings you can use with all our recipe ideas.

This versatile summer vegetable can be transformed into an Italian, American, or even Mexican-style casserole just by layering some different ingredients.

Our family is a big fan of zucchini and growing up my dad always grew it in our yard, the memories of this dish are priceless.

During the summer we bake lots of Zucchini Bread, make Zucchini Roll-ups, and love Fried Zucchini which is dipped in fresh marinara sauce, it's out of this world!

This recipe is perfect for a lighter meal, especially during warmer weather, and it can even be made in a slow cooker!

Zucchini Pizza Crust Recipe

Zucchini Pizza Crust is a fabulous substitute for regular dough when watching carbs!


I was amazed at how delicious this was.


When dieting or trying to cut back after the holidays, it's very hard to get back on track when you've eaten all your favorites.


If you are looking for a healthy alternative this is it!


I have now tried this with both green and yellow squash and they both come out great!


It totally satisfies the urge to eat a lot of carbs in regular pizza until I reach my goal weight, then splurge on the real deal pizza dough.


The bottom is soft, not crispy like a pizza crust. I have also substituted cauliflower it isn't as delicious as this but you be the judge.


Low Carb, with a great pizza flavor and perfect for weight watchers!


I offer two recipes for zucchini crust pizza along with suggestions for toppings with all low calories substitutions.

Zucchini Cream Cheese Filled Banana Cake

I just love this Zucchini Cream Cheese Filled Banana Cake, it's super delicious and a great addition to all my zucchini dessert recipes.


If you love zucchini bread or zucchini cakes, or even a delicious pumpkin zucchini spice bar, these cake squares are the best of both worlds.


Then, of course, repurposing those overripe bananas (which makes the best banana cookies by the way and cakes) makes them into a fabulous dessert like this zucchini cake.


I also added a little bonus inside, a very nice surprise as you bite into this decadent rich cake, there's a cream cheese filling inside!


It sounds totally gourmet for a zucchini cake but I promise you it's easy peasy!


You can also use this fantastic zucchini banana batter for muffins filled or unfilled.


There are several suggestions and additions below to add to this if you rather omit the filling no problem.


You can even dress this cake up to match the Italian colors and holiday theme with a little whipped cream and raspberry, red or green cherries and even a strawberry on top!
