Our Creamy Broccoli Salad is a delicious side dish and the most asked-for at any summer picnic we're invited to.

It has the freshest mix of flavors using fresh broccoli, apples, and nuts with just the right amount of sweetness.

Then the salad is tossed in a creamy dressing slightly sweet dressing on top that compliments these ingredients perfectly.

Of course, the star of this dish is bite-sized pieces of fresh broccoli but the crunchiness of the nuts and sweetness of the apples make this a perfect bite.

The recipe is super easy to make, one of the tastiest side dishes for a bbq, and the best part is it takes less than 15 minutes to make and can be served right away!

Broccoli Salad Step-by-Step Recipe

  1. peel the apples and dice, and cut up the florets into bite-sized pieces
  2. add the raisins, nuts
  3. make the salad dressing and set it aside
  4.  place the salad ingredients in a nice serving bowl then toss them with the salad dressing
  5. this can be served immediately or refrigerated until ready to eat
  6. Great for a bbq side dish, tailgate parties, beach, and picnics, plus it's the perfect side dish with any meal all summer long!




Shopping List

  • fresh broccoli florets cut into bite-sized pieces
  • diced apples cored and peeled
  • garlic powder
  • salt and pepper to taste
  • raisins
  • finely chopped carrots
  • apple cider vinegar
  • mayonnaise
  • Greek yogurt
  • honey
  • optional: minced onions or onion powder, nuts of any kind




Dressing for Salad Shopping List:

  • mayonnaise
  • apple cider vinegar
  • honey
  • granulated garlic powder
  • Greek Yogurt
  • salt and pepper to taste
  • cayenne pepper is optional if you like heat and spicy




Mix-In Ideas

  • chickpeas drained and rinsed
  • chopped celery
  • grapes
  • finely chopped onions
  • sliced radishes
  • cabbage slaw
  • fresh peas
  • corn cut off the cob
  • julienne carrot
  • hot peppers
  • cherry peppers
  • artichoke hearts
  • hearts of palm
  • raw zucchini cubes or other squash
  • cauliflower
  • add fresh herbs when available IE: basil, dill, Italian flat leaf parsley, oregano, mint, etc.



Tips


  • Keep salads cold by placing ice in a ziplock bag in another bowl and setting your salad on top when eating outdoors
  • Add pepperoni, chunks of ham-crumbled bacon, or sliced Italian sausage for a meat lovers' salad
  • Other vegetables or fruits like diced pineapple, shaved carrots, cauliflower, radishes, cucumbers, and artichoke hearts are all nice additions
  • Try mixing greens baby greens, spinach, and shredded red cabbage all nice additions also
  • Make a creamy garlic parmesan dressing for a change or use whatever you prefer
  • Any kind of fresh snap peas, green beans, or chickpeas are perfect in this salad
  • Use fresh lemon greek style dressing for a change or blue cheese
  • Substitute sunflower or pumpkin seeds for food allergies
  • Keep the salad cold  and covered if there are any leftovers for up to 2 days

Creamy Broccoli Salad

I once had this kind of slaw at a local restaurant and I loved this salad. Broccoli, raisins, nuts, and apples in a creamy dressing. Great side dish!

Ingredients

  • 1 head of freshly washed and cleaned broccoli (use just the florets) cut into bite-sized pieces
  • 1 red apple cored and diced
  • 1/4 cup shaved or diced carrots
  • 1/4 cup raisins
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon granulated garlic powder
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste
  • 2 tablespoons honey
  • Optional: 1/4 cup walnuts, almonds, pecans, or sunflower seeds

Instructions

  1. Core and either leave the peel on or off the apple and dice it, then place it in a serving bowl.
  2. Add to the same bowl cleaned broccoli florets from the fresh broccoli and cut that into bite-sized pieces.
  3. Add the nuts and raisins and stir that all together.
  4. In a small bowl whisk together the mayo, yogurt, salt, pepper, honey, and cider until just blended evenly.
  5. Pour the dressing over the broccoli mixture and toss to coat evenly together.
  6. This can be served right away or chilled to be eaten later.
  7. Note: We usually refrigerate this salad either overnight or at least an hour before serving to meld the flavors nicely but it's not required.
