Baked Sausage Peppers and Potato Italian Classic Recipe

A casserole style Italian dish we never get tired of. Get out that Italian crusty bread and you got a match made in heaven. I just love sausage and peppers and the hotter sausage the better for me! We make this often. Sometimes the classics are the most comforting. I remember my mom would make this dish and the smell would hit you in the face coming through the door when I came home from school. Baked Sausage Peppers and Potato Italian Classic Recipe

Italian  Hot Sausage Mom's recipe (mild or sweet if you prefer)
Potatoes cut into wedges
Italianelle peppers or bell peppers red and green
Optional: Onion sliced
Fresh garlic, rosemary, parsley and basil
salt and pepper to taste
olive oil
vegetable oil
Dried oregano
grated cheese

In a large oil sprayed pan arrange sausages on the bottom. Randomly place sliced peppers on top evenly (also onions if using). In a large bowl add the herbs spices 1/4 cup oils mixed together (more olive than vegetable to equal 1/4 cup) toss the potatoes in oil with garlic,  herbs, salt, pepper etc. Pour the potatoes over the peppers and sausage. Sprinkle with grating cheese and bread crumbs. Bake on 400 degree hot oven until potatoes are browned and crispy looking around 45 minutes.
