This is a classic Italian style casserole, Baked Sausage, Peppers and Potatoes, we never get tired of.
With the added delicious warm Italian crusty bread and you got a match made in heaven.

I just love sausage and peppers and the hotter sausage the better for me! We make this often. Sometimes the classics are the most comforting meals and this casserole dish is so easy that's even a bigger bonus.

I remember my mom would make this dish and the smell would hit you in the face coming through the door when I came home from school. That was truly one of my best memories of her cooking besides meatballs of course. Back in the 1950's money was pretty tight and this fed a large family inexpensively. We all loved it and still make it often. Did I say, if there are leftovers they are fantastic? Well check out this recipe, you will see it takes no time to do and a delicious meal anytime of the year.

Old bread became bread crumbs or croutons or used for bread pudding.

Just a Few Tips



  1. Use sweet, mild or hot sausage
  2. The best potatoes to use are russet potatoes
  3. The peppers can be Cuban, long hots or bell peppers.
  4. Use a blend of oil like olive oil and vegetable or canola when baking.

Baked Sausage Peppers and Potatoes

prep time: 15 mins cook time: 1 hour total time: 1 hours and 15 mins
This is a classic Italian meal that is easy to make using Italian sausage, peppers and potatoes. A staple in an Italian household.

ingredients:

2 lbs or more Italian  Hot Sausage Mom's recipe (mild or sweet if you prefer)

3 or 4 Potatoes cut into wedges ( I use russet)

3 or 4 Cuban peppers, long hots or bell peppers red and green

Optional: Onion sliced and anything you have in the refrigerator that needs to get cooked!

3 cloves sliced Fresh garlic, 

 around 1 teaspoon each rosemary, parsley and basil

salt and pepper to taste

oil just to coat evenly: olive oil, canola, vegetable or a combination of two

Garnish:

Dried oregano
breadcrumbs
grated cheese

instructions:

In a large oil sprayed pan arrange sausages on the bottom. Randomly place sliced peppers on top evenly (also onions if using) and sliced garlic. In a large bowl add the herbs spices 1/4 cup oils mixed together (more olive than vegetable to equal 1/4 cup) toss the potatoes in oil with garlic,  herbs, salt, pepper etc. Pour the potatoes over the peppers and sausage. Sprinkle with any other spices you like, the oregano, grating cheese and bread crumbs salt pepper to taste. Bake on 400 degree hot oven until potatoes are browned and crispy looking around 45 minutes or longer for dark and crispy potatoes. We like our potatoes crispy brown.
