This Baked Sausage Peppers and Potatoes is a classic Italian-style casserole.


Growing up and right through adulthood, this is our family's favorite kind of casserole we never get tired of.


With the added delicious warm Italian crusty bread and you got a match made in heaven.


I just love sausage and peppers and use hot sausage but you can use whatever you like, sweet, hot, or herb-style Italian sausage.


An Italian classic like this one is one of the most comforting meals are the most comforting meals and one of the easiest because it's all in one pan!


Did I say, if there are leftovers they are fantastic in a hoagie sandwich?


Mom made all her sausage homemade so we were lucky and had sausage patties, sausage skewers, and Italian sausage and pasta dishes often.


This simple casserole dish can be on your table in less than one hour.

Mom and Grandma



I remember my mom and sometimes grandma who lived was us ( dad's mom) would make this dish and the smell would hit you in the face coming through the door.


Seriously one of the best smells to walk into the house with when I came home from school.


That was truly one of my best memories of her cooking besides meatballs of course.


Mom made homemade sausage all the time and dad had the best of the best vegetable gardens in our yard.


We always had the freshest peppers and even homegrown potatoes, I was one lucky girl.


Back in the 1950's money was pretty tight and this fed a large family inexpensively.


We all loved it and even both my grown sons make it often, a real traditional recipe.

  • Any Other meats, pork chops, meatballs fried if you have leftovers add it to the pan

Just a Few Tips



  1. Use sweet, mild or hot sausage
  2. The best potatoes to use are russet potatoes
  3. The peppers can be Cuban, long hots, or bell peppers.
  4. Use a blend of oil like olive oil and vegetable or canola when baking
  5. This meal can also be done on the stovetop

Italian feasts in Utica, New York



If you grew up in my hometown Utica, New York, then you heard of sausage and peppers at local summer feasts.


We would have the best hoagie sandwich with hard-crusted delicious bread stuffed with fried peppers and sausage.


There was something about this being cooked outside that made your mouth water no matter how delicious it was at home, this was a must to eat every year.


All the local church feasts made them fantastic and with love, there weren't any potatoes in that sandwich, but it was fantastic and always etched in my mind as great memory.

Baked Sausage Peppers and Potatoes

Baked Sausage Peppers and Potatoes is an Italian Classic casserole dish that is perfect with a hunk of Italian crusty bread to complete the meal.

ingredients:

  • Use as much as you need for your family  this is just a guideline:
  • 2 lbs of Italian hot or sweet sausage
  • 3 or 4 Potatoes cut into wedges ( I use russet)
  • 3 or 4 bell peppers, long hots or any kinds you prefer
  • Optional: Onions, mushroom whole, whole tomatoes, escarole or spinach boiled and drained, any other vegetables you like
  • 3 cloves sliced fresh garlic or leave whole to roast in the oven
  • 1 teaspoon Italian seasoning or use  fresh herbs (basil, parsley around 3 tablespoons chopped)
  • salt and pepper to taste
  • pinch of cayenne pepper is Optional 
  • oil just to coat evenly: olive oil, canola, vegetable or a combination of two
  • Garnish:
  • Italian seasoning
  • Italian flavored breadcrumbs
  • grated cheese
  • olive oil

instructions:

How to cook Baked Sausage Peppers and Potatoes

  1. In a large oil-sprayed or parchment, lined casserole pan arrange sausages on the bottom. 
  2. Arrange the sausage (cut up and or leave long)   peppers, whatever else you are using IE onions, mushrooms, whole tomatoes,  etc. on the bottom of the pan. 
  3. In a large bowl add all the herbs and spices with 1/4 cup olive oil and toss the potatoes with seasoning and garlic.
  4. Place the potatoes over the peppers and sausage. 
  5. Sprinkle evenly with any other spices you like, the oregano, salt and pepper to taste, cayenne if using.
  6. Generously sprinkle the tops with Italian flavored bread crumbs and grated cheese.
  7.  Bake on 400 degrees hot oven until potatoes are browned and crispy looking around 45 minutes or longer for dark and crispy potatoes. 
  8. We like our potatoes crispy brown.
