Baked Sausage Peppers and Potatoes

Tuesday, January 6, 2015
A casserole style Italian dish we never get tired of. Get out that Italian crusty bread and you got a match made in heaven. I just love sausage and peppers and the hotter sausage the better for me! We make this often. Sometimes the classics are the most comforting. I remember my mom would make this dish and the smell would hit you in the face coming through the door when I came home from school. That was truly one of my best memories of her cooking besides meatballs of course.

Seriously not only an easy recipe but what other classic Italian American recipe can taste this great that anyone can make?
I just love a recipe that really is just whatever you want to add to it! This is it! Easy, throw all in one pan delicious sausage, peppers potatoes and whatever you like!
If you want to add onions, tomatoes, green beans, or even sliced zucchini it doesn't make it wrong! It's just another terrific idea that you came up with right?

Through the years mom made the best meals by making sure anything goes into the pan that we had in the refrigerator. Classic easy recipes that can't be right or wrong.
Back in the depression days they didn't let anything spoil and anything goes in that pan or pot.
I really have no idea why people have to criticize if one item added is wrong, it's not make it your own and to your families taste!

When Grandma came from Rome, Italy and mom's family from Bari, they cooked different but never ever wasted any food. Old bread became bread crumbs or croutons. Anything ready to spoil was cooked and made into stews. Today we have all kinds of recipes that haven't described the changes in the last 100 years. You can have a basic recipe and turn it into a gourmet circus! I have never sat there analyzing right or wrong. Here is my motto, if it taste great then let's eat and be merry!

Baked Sausage Peppers and Potatoes is a classic dish in Italy with these ingredients baked in the oven until browned and crispy

Baked Sausage Peppers and Potatoes

 Italian Classic Recipe

Italian  Hot Sausage Mom's recipe (mild or sweet if you prefer)
Potatoes cut into wedges ( I use Yukon gold)
Italianelle peppers or bell peppers red and green
Optional: Onion sliced and anything you have in the refrigerator that needs to get cooked!
Fresh garlic, rosemary, parsley and basil
salt and pepper to taste
olive oil
vegetable oil
Dried oregano
breadcrumbs
grated cheese

In a large oil sprayed pan arrange sausages on the bottom. Randomly place sliced peppers on top evenly (also onions if using). In a large bowl add the herbs spices 1/4 cup oils mixed together (more olive than vegetable to equal 1/4 cup) toss the potatoes in oil with garlic,  herbs, salt, pepper etc. Pour the potatoes over the peppers and sausage. Sprinkle with grating cheese and bread crumbs. Bake on 400 degree hot oven until potatoes are browned and crispy looking around 45 minutes or longer to your liking. We like our potatoes cripsy brown which can take more than an hour.
