Firecracker Shrimp

These are delicious appetizers or party finger food called Firecracker Shrimp.

Ingredients

  • Firecracker Shrimp Sauce
  • 2/3 cup sweet chili sauce
  • 3 tablespoons freshly squeezed lime juice
  • 3 tablespoons soy sauce
  • 1-1/2 teaspoons granulated garlic powder
  • 1 teaspoon ground ginger
  • zest of 1 lemon ( around 1 tablespoon)
  • cayenne pepper to taste (I add a pinch)
  • Coating for Shrimp
  • salt and black pepper to taste
  • 1 teaspoon granulated garlic powder
  • 1 tablespoon Italian dried herb seasoning
  • 1 pound jumbo shrimp, peeled and deveined (tail on or off)
  • 3 eggs, beaten
  • 3/4 cup cornstarch
  • 1/2 cup vegetable oil

Instructions

  1. In a small bowl, stir all the sauce ingredients together and set aside.
  2. In two pie plates, whisk the eggs in one and set aside. In the other add the cornstarch, salt, and pepper, garlic, and herbs, then whisk to evenly combine.
  3. Heat the oil in a deep frying pan or use an electric deep fryer at 350 degrees.
  4. Place the shrimp in the cornstarch mixture, rolling to coat.
  5. Dip the shrimp in egg.
  6. Fry in the hot oil, then drain on paper towels.
  7. Heat the sauce in either the same pan if there isn't too much oil or a clean pan, then toss the shrimp in the sauce to coat.
  8. Serve over cooked rice or pasta.
  9. You may also prefer this alternative: Yum Yum Sauce Dipping Sauce
  10. Note: served cold, not warm
  11. 1 cup mayonnaise
  12. 1 tablespoon ketchup
  13. 1 tablespoon melted butter
  14. 1 tablespoon mirin
  15. 2 teaspoons rice vinegar
  16. 1/4 teaspoon paprika
  17. 3/4 teaspoon garlic powder
  18. 3/4 teaspoon onion powder
  19. 1 tablespoon granulated sugar
  20. 1-2 tablespoons water, or until the desired consistency is reached
  21. Optional: a few splashes of hot sauce or cayenne pepper for a touch of heat
  22. Combine all the ingredients in a small bowl, cover, and chill for at least 2 hours before serving.
  23. Store in a mason jar for up to a week.
