Ingredients You Will Need
- cucumber sliced in chunks seeds removed with a spoon
- grape tomatoes sliced in half or any tomatoes cut up
- garbanzo beans (chickpeas) rinsed and drained
- avocado peeled and sliced in wedges
- sliced kalamata olives
- freshly chopped parsley
- chopped mint leaves (optional)
- oregano, garlic powder salt, and pepper
- pinch of cayenne pepper
- lime juice
- lemon juice
- extra virgin olive oil
- mozzarella or feta cheese

Avocado Chickpea Cucumber and Tomato Salad

This is a delicious salad made with avocado, chickpeas, tomatoes olives and cheese. It's light, healthy and the perfect salad any time of the year!
Ingredients
- 1 medium-sized cucumber sliced in chunks seeds removed with a spoon
- 1 cup grape tomatoes sliced in half
- 1 can garbanzo beans (chickpeas) rinsed and drained
- 1 avocado peeled and sliced in wedges
- 1/2 cup sliced kalamata olives
- 1/2 cup freshly chopped parsley
- 1/2 teaspoon each oregano, garlic powder salt and pepper
- pinch of cayenne pepper
- 3 tablespoon lime juice
- 1 tablespoon lemon juice
- 2 tablespoons extra virgin olive oil
- 1 cup chopped mozzarella or 1/2 cup feta cheese

Instructions
- In a medium-size bowl add the chickpeas, cucumber, avocado, tomatoes, and olives.
- Mix together adding parsley. In another small bowl mix the dressing, add the lemon juice, fresh lime juice, olive oil, spices, and herbs adding a pinch of cayenne pepper.
- Pour over the top of the vegetable mixture. Top with cheese of choice. Serve cold.
- This tastes better when refrigerated for at least three hours to blend flavors... That's if you can wait!
