Lemon Curd is a slightly tart filling that's very thick, unlike pudding and used for filling cakes, cookies, tarts and so much more!


Most of us love lemon here. However, we still have chocolate lovers too! So, you can fill them with whatever you like!


I had just gone to a new kitchen store and spotted these mini tart pans.


Although I am nowhere near a pastry chef by any means, I had to go home and play right away!


I love these, they are so versatile on what you can use them for. desserts, meat fillings, salad style appetizers.


I can just come up with a ton of uses for this delicious lemony confection.


We also have an eggless lemon curd for those who can't tolerate eggs.


We love anything with lemon especially lemon meringue topped with curd, lemon tart, and lemon cake!

What is Lemon Curd?



The best way to describe lemon curd is that it's a spreadable dessert topping.


It’s buttery and sweet has a very intense tart flavor and perfect just about on anything who loves lemon.


Lemon curd is made from ordinary pantry ingredients and made in minutes, there is nothing difficult.


Easy to store in a mason jar, and will last 10 days in the refrigerator.

Tips For Successful Lemons Curd


  • Use a heavy-based, nonreactive saucepan and thick stainless steel pan when using a double boiler
  • Stainless steel, anodized aluminum, and enamel all work well
  • DO NOT USE plain aluminum or unlined copper, they will react with the acid from the lemons, discoloring the curd and giving it a metallic flavor
  • Stir the sauce often to keep it creamy and to prevent burning
  • Stirring the mixture keeps the eggs from bonding too tightly, resulting in a creamy, not a solid lemon curd
  • Don’t let the curd boil, this will make the curd curdle, take your time, low to medium heat, and don't be impatient the curd will thicken!
  • The curd is cooked when it reaches 170 F

This is a homemade lemon curd to fill pastry will. This can be used as a filling for cakes, tarts and so much more all from scratch and simple pantry ingredients.

ingredients:

  • 1 cup of sugar
  • 3 eggs
  • 1/2 cup freshly squeezed, seeds removed lemon juice
  • 1 tablespoon fresh lemon peel
  • 1/4 cup butter melted

instructions:

How to cook Homemade Lemon Curd

  1. Using a double boiler,(and make sure it's a thick bowl your using)  place beat the eggs and sugar together add to the boiler pan. Add the lemon juice, peel, and butter. Simmer over the boiling water until thickened around 15 minutes or so. that's it!
