The sauce this chicken swims in has some Dijon mustard and fresh thyme, basil, and parsley to kick up the creaminess and flavors that compliments anything you pour it over.
We love the sauce so much it's simple and great over mashed potatoes, pasta and rice, so whatever you have time for try this over one of them when serving this meal.
The easiest meals are always the best when they are all in one pan, plus in a pinch, I have even substituted already prepacked grilled chicken breast and leftover rotisserie chicken off the bone!
If there happen to be any leftovers, the sauce is marvelous with shreds of the chicken over bread for a hot covered sandwich, so this is a win-win meal no matter how you serve it and in a hurry to get that weeknight dinner n the table.

Easy Cream Sauce
This sauce is truly a delicious blend of fresh herbs and spices and with the addition of dijon mustard it takes it over the top in bold flavors.
We just love the creamy coating on the chicken, and of course, if you're not a mushroom lover try adding some canned artichoke hearts, which also taste terrific in this dish.
This chicken goes right back into the same pan and finishes cooking in the delectable wine sauce on the stovetop and we always use a cast-iron skillet.
Our easy chicken recipe has the most simplified instructions to put a taste of gourmet on your tables quickly.
The sauce has even made the pickiest of eaters fall in love with this dish and it also tastes great served over Garlic Mashed Potatoes.
Ingredients You Will Need (scroll down to the bottom for exact measurements)
- boneless skinless chicken breast cut in cubes or cutlets
- chicken broth
- sliced garlic and granulated garlic powder
- butter
- olive oil
- heavy cream or use a lactose-free cream
- chicken broth
- salt, pepper
- baby bella mushrooms
- Dijon mustard
- Italian parsley fresh or dried, thyme, basil
- white wine of choice
- optional: cayenne pepper flakes for heat
Tips:
- use boneless chicken or pork tenderloin
- use a meat thermometer to ensure the chicken is at 165 degrees internal temperature
- add more butter or olive oil for frying chicken
- substitute artichoke hearts or another vegetable you prefer if you aren't a mushroom fan
- lactose milk can be used to substitute the cream
- half and half or evaporated milk can be substituted for heavy cream and/or for lactose use a dairy-free whipping cream product
- low sodium chicken broth can be substituted for regular
- keep chicken warm while making this sauce
- baby bella mushrooms are a crimini style and perfect for this dish however you can use whatever you prefer
- add more chicken broth if you made it too thick
- wash mushrooms and pat dry with paper towels

Chicken with Mushroom Sauce

This chicken and mushroom sauce can be served quickly any weeknight. Serve over rice or pasta, it's a big hit for the family in creamy bold flavors.
Ingredients
- 3 boneless skinless chicken breasts
- 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon sweet paprika
- 1/2 teaspoon granulated garlic powder
- 1 pound of sliced baby bella mushrooms, cleaned
- 4 tablespoons butter and more as needed
- 1 tablespoon olive oil
- 2 garlic cloves, sliced
- 1 1/2 cups chicken broth
- 1/2 cup dry white wine
- 2/3 cup heavy cream
- 2 large springs of fresh thyme, 2 fresh basil leaves, and 2 tablespoons fresh flat-leaf chopped parsley
- 1 teaspoon Dijon mustard
- 2 teaspoons cornstarch dissolved in 2 tablespoons chicken broth (or use water)
Instructions
- Cube or slice the boneless chicken breasts.
- In a plastic zip lock bag (or use a paper plate) add the dry seasonings with flour and shake the chicken in it. Set this aside.
- Heat the cast iron skillet to medium heat and melt 2 tablespoons of butter.
- Saute for around 4 minutes on each side then add to a plate and keep warm.
- Add more butter to the skillet and finish cooking all the chicken.
- Add more butter to the pan(if needed) for the mushrooms and saute them until starting to crisp up.
- Add the garlic with olive oil and saute it for around 1 minute then wine, broth, mustard, and cream with fresh herbs.
- Simmer for around 4 minutes then add the cornstarch and simmer until it thickens to however thick you want we like it thin to pour over whatever we are serving this with.
- Salt, and pepper to taste (add cayenne if you like spicy heat)
- Boil the rice or pasta you like to package instructions and serve this on top.
