The first hint of fall I love is to start a big pot of chili on the stove to simmer.


Chili is one of those comfort foods that really is very good all year round but I really enjoy it in the cooler month.


The great thing about chili, it's economical, feeds a large crowd, and is always welcomed at parties, game days, and even barbecues in the summertime.


Chili makes great leftovers for a filling in Mexican Lasagna, tortilla bowls, and even the filling for air fryer hot pockets.


I love chili over baked potatoes, chili cheese fries, and even a topping for chili burgers and hotdogs.

What is Chili?



What makes up a pot of chili is open to debate. I


It is a thick sauce of meat and chilies (peppers).


Some argue that meat is essential and that beans have no place in a true chili.


Most cooks include tomatoes, but some shun them.


There is the usual tomato, pepper, and tomato sauce chili, white chicken chili, chili verde, vegetarian chili, Southwest chili, Italian Merlot Chili, and three-alarm chili that's hot hot hot.

More About Chili



Chili as we know it had its origins amid mariachi bands in the Spanish for markets of San Antonio, but in the past century, it has spread far and wide.


It became the official state dish of Texas in 1977 and is well-known throughout the country in some of its many versions.


To me, chili has to have beans, tomato sauce, and not too hot.


Just a little heat is perfect.

  • for meats use ground chuck, ground turkey, boneless white chicken breast, ground pork
  • add hot or sweet peppers

  • black olive slices, crumbled tortilla chips, slices of avocado, chopped fresh tomato, diced onions, slices of jalapeno peppers, tabasco sauce, sour cream any kinds of melting cheeses grated

Ingredients for Old World Style Chili



  • ground sirloin or ground round hamburger beef
  • pinto, kidney, or black beans, you also can use any white beans or a medley of all 3 kinds
  • wine, red
  • plum tomatoes
  • plum tomatoes pureed
  • 28 ounce can of tomatoes crushed
  • 2 stalks celery
  • green chilies or green bell peppers sliced or chopped in square pieces
  • garlic minced, chili powder, parsley, salt, pepper
  • sugar
  • granulated garlic
  • cumin
  • cayenne pepper to taste for heat

Simple Chili is So Comforting



This old-style chili is so easy to make and can feed a large family very economically.


You can tweak it the way your family likes, for non-bean lovers add peas or you can even substitute rice or small pasta they will love it with this delicious sauce.


This recipe can easily be made in a slow cooker on low all day while you work, just brown the meat first dump everything into a crockpot and it will be ready when you get home!


Don't forget, use what meat you have on hand as long as it's boneless beef, turkey, chicken, pork all will be fine in chunks or ground up!

This is just a plain old-fashioned chili with meat and beans. Peppers, tomatoes and a spicy sauce is what makes this chili so tasty.

ingredients:

  • 2 pounds ground sirloin or ground round hamburger ( you can substitute lamb or ground turkey)
  • 3  cans 12 ounces or larger of drained pinto, kidney or black beans, you also can use any white beans or a medley of all 3 kinds
  • 1/2 cup red wine or use chicken broth for non-alcohol
  • 4 fresh plum tomatoes chopped into small pieces
  • 1 - 28 ounces can of crushed tomatoes
  • 2 stalks celery chopped fine
  • 2 cans of green chilies or green bell peppers sliced or another pepper you prefer
  • 1 teaspoon each chili powder, cumin, parsley, salt, pepper
  • 4 cloves of sliced garlic
  • 1 small diced onion
  • 1 tablespoon sugar
  • 1 1/2 teaspoons granulated garlic
  • cayenne pepper to taste for heat
  • Garnish sliced olives, minced jalapenos, minced onion, chopped tomatoes, sour cream, shredded cheese. tabasco sauce or habanero for 3 alarm chili

instructions:

How to cook Old World Chilli

  1. Add the ground beef to the large saucepan with 2 tablespoons olive oil saute with onion and garlic until pink is gone. 
  2. Add everything else to the pot.
  3. Simmer for at least 1 hour or more until this sauce has thickened on low. 
  4. If you want a thicker chili you can add some thickener like masa corn or even ground tortilla chips into the sauce.
  5. We like to crush tortillas and add as a garnish with shredded cheeses on top.
  6. Note: You can make this in a slow cooker on high for 3 hours, low for 4 hours.
  7. Instant pot pressure cooker mode in 15 to 20 minutes.
  8. Stovetop around 1 hour and 10  minutes on low.
