My dad would always make them for us. Then when I had kids and we were on a strict budget I would make them.
The kids went nuts when I added the blends of cheddar over the top.
Easy throw-together meal and they were over the moon for this one!

Cheesy Frankfurters Potatoes and Peppers
- Small cubes of potatoes around two or three
- Hotdogs cut up you decide how many per family I usually use a package of 8
- Cheddar shredded cheese to cover the top around 1 cup
- Bell pepper slices 1 usually enough for flavor
- Olive oil for drizzling
- Garlic powder sprinkled on top evenly
- Cayenne pepper is optional for a little heat
- Chili powder sprinkled on top evenly (or paprika)
- Salt and Pepper to taste
Optional: Add 1 cup of sauerkraut on top with 4 tablespoons of Thousand Island dressing for a Reuben-style casserole. Substitute Swiss cheese instead of cheddar.
Directions
- In a bowl add the cubed potatoes, cut-up hot dogs, slices of bell pepper, salt, pepper, and cayenne to taste.
- Arrange in your greased baking pan to fit.
- Drizzle the top with olive oil and sprinkle with chili powder.
- Bake at 400 degrees until the potatoes are browned on top and the hot dogs begin to brown.
- Top with shredded cheese and bake till melted.
- For Reuben style: add the sauerkraut before the cheese and dressing if using and top with Swiss cheese last.
- Note: these can be fried in a pan with oil until the potatoes are browned adding the hotdogs for the last 10 minutes. Then add the cheese and cover until melted.

My Aunt Marie use to make this when ever I stayed over. Over loved it. I think I might surprise Chris with this this week. I like that it is done in the oven. My aunt use to do it on the stove top but I like that this does not require standing over the stove. Thank you for sharing this!
