No-Bake Strawberry Icebox Cheesecake is not like the vintage old-fashioned style of the 1960s this is more of a gourmet icebox dessert.

Old-fashioned icebox cake layered with graham crackers, pudding, and whipped cream this one has added cream cheese to the pudding and is a fluffy delicious fruit dessert.

There are so many possibilities for making this innovation using any flavored cookies or graham crackers and they can be left whole or crushed!

Filling and Crust Tips



It's really a preference what instant pudding you prefer or even vanilla cooked pudding if you rather make it.


You can experiment with several flavors for making instant pudding out there on the shelves of your local supermarket.


Making cookie and filling combinations can be substituted with any brand, flavored puddings and even changing the fruit!


The crust can be chocolate, graham cracker crust, pretzel crust, or just a store-bought crushed cookie you prefer like the vanilla wafers we use for banana pudding (you'll just layer this with a crumb mixture instead of sheets of graham crackers).


The whipped cream cheese makes the pudding taste like cheesecake flavor and thickens the filling to a dreamy, creamy, dessert confection.


The dessert can be layered in trifle bowls, parfaits in pretty champagne glasses, and turned into an elegant dessert when hosting a dinner party using lady fingers, shortbread, and of course your favorite fruits and whipped cream cheese filling.




Here is No Bake Strawberry Icebox Cheesecake ingredients you'll need to have handy (the post at the bottom is printable) 


  • instant vanilla pudding, or use whatever pudding flavor you prefer, or a cooked homemade pudding cooled (regular or sugar-free)
  • softened whipped cream cheese
  • milk
  • strawberries
  • any kind of  graham crackers these can be layered whole or crushed (you can also use cookie crumbs instead of graham crackers
  • whipped real cream or whipped topping thawed
  • Optional Garnishes: drizzle with strawberry ice cream topping, toasted coconut, toasted almonds whipped cream, chocolate shavings, sprinkles, favorite candy bars crushed IE Ferraro Rocher

Easy No-Bake Ice-Box Cakes



If you love easy no-bake desserts, this is the quickest old-fashioned style of icebox cake that dates back to the 1950s.


Whether you want to cut corners and use instant or regular pudding then add softened cream cheese, this no-bake cheesecake icebox cake is a favorite every cheesecake loves.


A perfect dessert for any non-baker to try because it is a super easy icebox cake and can be made in less than 15 minutes then it just needs to be refrigerated for a few hours to set.


Don't forget you can even mix and match fruits, and pudding flavors using all homemade or store-bought ingredients which can be easier than this!

No Bake Strawberry Icebox Cheesecake

This is a quick icebox cheesecake dessert made with layering graham crackers, a cheese creamy filling, and strawberries

Ingredients

  • 1 package vanilla instant pudding to package instructions (sugar-free can also be used) or make cooked vanilla pudding and cool it
  • 1/2 cup soft whipped cream cheese
  • 2 cups of real whipped cream sweetened (or use a 1 - 8-ounce container of non-dairy whipped topping thawed saving half for the top)
  • 1 pint or more of fresh strawberries hulled and sliced or use canned peaches, sliced mango, or berries of any kind
  • 2 or more packages (around 2 cups crushed) of whole cinnamon-flavored graham crackers or crushed crumbs (leave some crushed to garnish the top)
  • Note: for using the crumbs layering you will need 2 tablespoons butter softened at room temperature or if using cookie crumbs.
  • Note: (you can also use vanilla wafers if you don't have graham crackers) any flavored cookies, lady's fingers, or whatever when layering your dessert with the filling

Instructions

  1. In a medium-sized, bowl add the vanilla pudding fold in the whipped cream cheese, and blend until smooth.
  2. Note: if using cooked pudding make sure you cool it completely before proceeding.
  3. Add the whipped cream cheese and whipping topping to the pudding and fold it gently together just until combined.
  4. If making graham cracker crumbs place the crackers (or cookies if using) into a food processor with the butter, and pulse until for around 40 seconds.
  5. Line a deep dish around an 8x8 inch square pan with graham crackers for the first layer.
  6. Add a layer of sliced strawberries, then the whipped filling mixture, more strawberries, and sprinkle the top with saved crumbs of the graham crackers.
  7. Tips and Alternatives: Line parfait glasses, champagne glasses, trifle bowls, or wine glasses for an elegant dinner dessert.
  8. Save some strawberries to the top for garnish and arrange in a pretty pattern.
  9. Refrigerate at least 30 minutes before serving or until firm.
