Mine happened to be my mom for Mother's day many years ago before she passed on.


This was her favorite.

Step by Step

  1. Cut the Italian for French uncut bread into 4-inch thick pieces slicing slightly in half not cutting through the bottom to form a pocket
  2. In a clean bowl mix the filling ingredients
  3. In another clean bowl mix the egg ingredients
  4. Heat the griddle or frying pan coating it with olive oil or butter
  5. Fill the bread, then dip it into the egg mixture
  6. Fry on both sides until golden brown

Tools Needed

  • Griddle or frying pan
  • Two bowls
  • Spatula or tongs for turning French toast
  • Plate to serve the French toast on
  • Whisk or fork
  • Small microwave-safe bowl for melting chocolate




Ingredients You Will Need to Make Cannoli Stuffed French Toast

  • thick baguette or thick bread or use low-carb wheat bread
  • ricotta cheese
  • powdered sugar or sugar substitute to taste
  • Marsala wine
  • semi-sweet chocolate chips or use sugar-free substitutes
  • eggs
  • whole milk
  • cocoa powder
  • cinnamon
  • olive oil or unsalted butter
  • Fresh raspberries, blackberries around 1 cup or use strawberries sliced
  • or use fresh: Boysenberries, Raspberries, and Blackberries
  • Garnish:
  • Melted Dark Chocolate

Other Filling Suggestions for Non-Cannoli Lovers

  1. peanut butter and jelly
  2. cream cheese whipped with chopped fresh fruit IE strawberries, blueberries, fresh chopped peaches
  3. cream cheese flavored with walnuts chopped cinnamon and sugar or honey
  4. Pecans, honey, cream cheese, and a splash of bourbon or any flavored extracts IE maple
  5. Note: cream cheese can be flavored with any fruits, added nuts, flavoring, etc, adapt with whatever you prefer




Tips

  • Keep The heat on low too high will burn
  • Flavor the ricotta to taste, make sure you sample yours first to see if it's sweet enough
  • Melt the chocolate in the microwave for just 1 minute and swirl it on the plate before the french toast is done to have it ready or use hot fudge sauce melted instead of melting chocolate.
  • Use tongs to dip the bread with, it will hold it together.
  • Use pureed fruits instead of chocolate on the plate when serving

Assembling the Stuffed French Toast



The ricotta cheese makes this cannoli filling light, not too sweet and the berries are the perfect topping but this is all optional.


A little drizzle of chocolate on the plate just to dress it up a bit looks stunning and elegant and gives just the right presentation or you can use pureed fruits instead.

This is a special Mother's Day french toast filled with Cannoli cream stuffed French toast. It has all the flavors of cannoli for breakfast made with delicious ricotta cheese using a thick bread dipped into an egg mixture.then fried.

Ingredients

  • 1 loaf of thick baguette or thick bread or use low-carb wheat bread
  • 1-8 ounce container of ricotta cheese
  • 2 teaspoons powdered sugar or sugar substitute to taste
  • 2 teaspoons Marsala wine
  • 1/4 cup semi-sweet chocolate chips or use sugar-free substitutes
  • 2 eggs
  • 1/2 cup whole milk
  • 1 teaspoon of cocoa powder
  • 1 teaspoon powdered sugar
  • 1/2 teaspoon cinnamon
  • 4 to 5 tablespoons of olive oil or 4 teaspoons of unsalted butter mixed with 2 tablespoons of olive oil
  • Optional:
  • 1 cup of Fresh fruits of any kind you like IE: peaches diced, raspberries, blackberries, strawberries or you can use a canned pie filling you prefer
  • Garnish:
  • 1/2 cup Melted Dark Chocolate or ice cream hot fudge sauce (I used the microwave for 30 seconds using a good-grade candy bar)
  • more chopped fresh fruits

Instructions

  1. First, prepare the bread:
  2. Cut your bread around a 4-inch piece then down the middle being careful to not slice through the bottom leaving a pocket to fill in between both slices.
  3. In a medium-sized bowl, combine the ricotta, pinch of cinnamon, sugar to taste, and vanilla in a bowl until well combined. Then fold in the chocolate chips.
  4. Using around a tablespoon or more, stuff each pocket into a slit opening of the slice of bread, place on a cookie sheet, and place in the refrigerator while making the coating to dip these in
  5. In another small bowl cocoa powder, 1 teaspoon powdered sugar, and cinnamon.
  6. Add the cocoa sugar mix to the milk, with two eggs.
  7. Add the Marsala (if using) and whisk together until well blended. It should look like very light milk chocolate in color and very smooth.
  8. Heat griddle or fry pan adding (I use only the oil) olive oil or butter.
  9. Coat each side of the stuffed bread slices in the chocolate-coating milk mixture using tongs to hold the bread together. Cook on each for around 3 minutes or until golden brown.
  10. Place on paper towels to drain any oil off.
  11. On a plate drizzle some melted chocolate chips over the bottom with fork tines for a garnish. Place the cannoli toast on the plate then top with some berries over the Italian cannoli toast.
