  • grape tomatoes
  • cubed mozzarella, provolone or feta
  • fresh chopped parsley
  • fresh chopped mint 
  • small seedless cucumber cut into small pieces
  • salt pepper to taste
  • lemon juice
  • olive oil
  • seedless watermelon cubed
  •  Garnish
  • Romaine full lettuce leaves
  • Fresh basil leaves
  • Mint sprigs
  • Basil Oil Dressing: fresh basil leaves extra virgin olive oil

  1. arugula
  2. spinach leaves
  3. butter
  4. iceberg
  5. frisee
  6. fancy greens
  7. endive
  8. chopped escarole
  9. kale

Watermelon Basil Salad fresh and a dieters delight. If you love watermelon this is a great light brunch, lunch and so refreshing

Ingredients

  • 1 cup halved grape tomatoes
  • 1/4 cup cubed mozzarella, provolone or feta
  • 1 teaspoon fresh chopped parsley
  • 1 teaspoon fresh chopped mint
  • 1 small seedless cucumber cut into small pieces
  • salt pepper to taste
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 4 pounds of seedless watermelon cubed
  • Garnish
  • Romaine full lettuce leaves or another green you prefer
  • Fresh basil leaves
  • Mint sprigs
  • Basil Oil Dressing:
  • 1 cup fresh basil leaves
  • 3/4 cup extra virgin olive oil

Instructions

  1. (Basil Oil Dressing):
  2. Blanch the basil leaves in boiling water for one minute. Place in a bath of ice water. Drain.
  3. Put the basil and olive oil in a food processor and blend till smooth. Pour this basil oil into a cheesecloth with a glass bowl underneath it.
  4. Let it drip. Do not squeeze cheesecloth. Let drip for around 1 hour.
  5. In the meantime make the salad.
  6. I line a bowl or individual plates with romaine lettuce set aside.
  7. In another bowl toss the watermelon, cucumbers, tomatoes, and cheese with olive oil and lemon juice.
  8. Transfer to your serving bowl or plates.
  9. Drizzle with basil oil and more olive oil.
  10. Salt, and pepper to taste.
  11. Garnish with mint sprigs and basil leaves.

  7. This is such a wonderful summer salad. Perfect at a picnic or eating al fresco. My daughter makes a wonderful one -- I remember I couldn't stop eating on it. The watermelon is so filling that you don't overeat on the heavier dishes. This is a fantastic recipe.

  10. I make a watermelon and heirloom tomato salad with red orion. Dressing is sherry vinegar , olive oil, honey , fresh basil and kosher or sea salt.I have some in the fridge. The original recipe used peaches but I changed it to watermelon.
