How easy is it to make an all-in-one pan scrumptious dessert easy Red Raspberry cobbler instead of making a pie and rolling out dough? Super fast and simple!

This takes hardly any time to mix the batter, add to melted butter, pour a can of pie filling on top, then it all makes magic in the oven.

Yes, it's that easy.

Serve this with any kind of ice cream or freshly whipped cream.

Add a little mint garnish and you have what looks like a gourmet dessert that will be the easiest recipe you will ever make.

This is excellent for summer cookouts or entertaining and can be served warm or cold.

What's even better is you can use any fruits you like, even mix and match.

I will give you a list of fruits to use if you're not a fan of raspberry!

We love raspberry and it just so happens raspberry pie is my favorite flavor. and I love raspberry shortbread cookies and raspberry red velvet cupcakes, so I am a huge fan!

I love using raspberries for so many desserts, they really shout summer to me.

Cobbler History




If you're looking for a pretty dessert, cobblers aren't one of them



Emerging from a makeshift version of the ever-so-popular pie, early in the 1800s, this dessert was made by early American settlers using fruits.



Many Dutch and English immigrants brought traditional pie recipes to the New World.



When the settlers moved westward the fruits were grown on the East Coast it became difficult to get many of the ingredients and travelers started adapting from making pies to using canned, dry fruits, flours and baking on campfires that created this style of pie to cobblers.



Later in the late 19th century, the dessert officially was labeled as a cobbler, and in the 1950s peach cobbler became very famous in the South.



There are now several versions out there and this is the recipe for this famous well-known dessert that we love.






Ingredients You Will Need

  • self-rising flour (do not use regular all-purpose flour it will not rise)
  • melted butter
  • sugar
  • milk
  • pure vanilla extract
  • red raspberry pie filling or any other pie filling you prefer
  • or use fresh raspberries or fresh fruit you like

  • Blueberries
  • Chopped fresh cherries
  • Diced Mango
  • Chopped Peaches
  • Any kind of pie fillings
  • Apples diced
  • Strawberries
  • Blackberries






Tips


  • If you use fresh fruits that  produce a lot of juice you will need a thickening agent like cornstarch  2 tablespoons per 2 cups of fresh fruits along with 1/4 cup sugar and a pinch of cinnamon
  • Any pie filling can be used with this recipe
  • Always use self-rising flour 
  • Grated fresh citrus like orange or lemon can be substituted for vanilla
  • Other extracts can be substituted for vanilla for a different flavor
  • Best fruits to use are raspberries, blackberries, blueberries, strawberries and peaches
  • For a festive 4th of July, Memorial or Veterans Day dessert, top your whipped cream with blueberries for fun

Easy Red Raspberry Cobbler

This is a delicious easy cobbler you can make with fresh fruits or canned pie filling. The cobbler bakes over the filling and makes a fruit cake-like cobbler that's simple quick and super delicious.
Prep time: 10 MCook time: 45 MTotal time: 55 M

Ingredients:

  • 1 cup self-rising flour (do not use regular all-purpose flour it will not rise)
  • 1 stick melted butter (1/2 cup)
  • 1 cup of sugar
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • 1 can red raspberry pie filling or any other pie filling you prefer
  • Optional Fruits: blueberries, chopped fresh cherries diced mango chopped peaches. chopped apples, sliced strawberries, blackberries, boysenberries
  • Note: when using fresh fruits that produce a lot of juice,  you will need 2 cups fresh fruit, 2 tablespoons cornstarch, and a pinch of cinnamon and sugar to taste I use around 1/2 cup

Instructions:

  1. Preheat oven to 350 degrees.
  2. Melt butter in a 9 x 9 square pan ( you will not grease the pan)
  3. Blend together in a medium-sized bowl, the flour, sugar, milk, and vanilla evenly together then pour this over the melted butter.in the pan.
  4. Pour the pie filling of choice on top of the batter,  or use fresh fruit tossed in sugar and cinnamon.
  5. Note: The cake will rise over the batter to form the cobbler on top.
  6. Bake for 45 to 50 minutes at 350 degrees until browned on top.
  7. Serve with whipped cream or ice cream and best served warm however can be served cold.
  8. Store leftovers in the refrigerator.
