This is a delicious Irish Pub Warm Guinness Cheese Dip it's a fabulous crock full of flavors with a bold beer smooth creamy Irish cheese, and the perfect appetizer that's truly addicting on everything you put it on.

We love a fondue-style dipping melted cheese on our Homemade Quick Soft Pretzel Bites, or with rye cubes of bread, swirled pumpernickel bread plus we have several more suggestions below on what else this marvelous melted cheese dip will be fabulous on.

Who Doesn't Love Melted Cheese!



This tasty appetizer dip is very addicting so I will warn you, that you'll be craving it often.


It's a great topping for pasta, drizzled on vegetables and so much more so this versatile dip will be a great addition to your recipe collection!


If you're needing something to bring to a party this dip is sure to be gone first.


Everyone always asks for the recipe and it's so super simple so I usually just print some copies and bring them with me plus you can really any cheeses and we offer a substitution list for ingredients.


Remember you can always add this to a slow cooker on warm settings when hosting a party and serve a big assortment platter of our suggestions below then just sit back and enjoy your company.

Optional Ingredients To Add

  • crumbled cooked bacon
  • fresh minced garlic to the roux
  • chopped fresh parsley
  • hot sauce to taste
  • rotel canned tomatoes
  • cooked hamburger meat drained
  • chopped peppers green chilies, roasted peppers, or jalapeno peppers

  • Dubliner cheese
  • minced garlic
  • stout beer
  • salt 
  • freshly cracked black pepper
  • mustard
  • Worcestershire sauce
  • flour
  • half and half 
  • heavy cream

Substitution Suggestions

  1. extra-sharp cheddar, jack cheese, jalapeno jack cheese, swiss cheese
  2. any butter unsalted
  3. any kind of beer you prefer 
  4. non-alcohol beer
  5. hot sauce instead of Worcestershire sauce
  6. garlic powder or minced garlic
  7. whole milk instead of half and half

  • soda bread.wedges
  • pita chips
  • garlic bread
  • potato chips

The Easiest Tastiest Appetizer Ever



Choose fresh blocks of cheese whatever you prefer you can substitute your favorite!


Just adding a little cayenne pepper will make this a spicy cheese dip so don't be afraid to adapt it to your taste.


Again, you can add more or less of whatever you like, this aioli will be a basic recipe and can change in an instant.


Don't forget our other delicious ways to use this cheese dip: topping for steamed vegetables IE: broccoli, cauliflower, medley of vegetables,  a great topping for French fries, topping for a steak sandwich or hamburger, drizzling some on a baked meatloaf, drizzling on shaved roast beef in a sandwich, and it's perfect for dipping raw cut up vegetables, potato chips, tortilla chips, pretzels, bread cubes, pita bread toasted and assorted crackers.

This is a delicious hot melted cheese with Irish stout beer and loaded with flavor to use for dipping soft bread, soft pretzels, chips, and a fantastic appetizer any time of the day and truly addicting.

Ingredients

  • 1- 7 ounce size package of Irish Dubliner cheese cut into small pieces
  • 12 - ounces of Stout beer
  • 1/2 cup extra sharp cheddar cheese grated do not use pre-shredded cheeses, the best results come from brick
  • 3 tablespoons Irish butter or any kind of butter unsalted
  • 2 tablespoons flour
  • 3/4 cup half and half
  • 1/2 cup heavy cream
  • 1 teaspoon roasted granulated garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Irish mustard with ale or use a spicy brown
  • salt and pepper to taste
  • Optional Garnish: freshly cracked black pepper to taste or cayenne pepper for the heat if desired
  • Note: you can substitute your favorite cheese in full brick and use a blend of good melting cheeses IE cheddar, swiss, jack, pepper jack however we stick to the Irish brands and products

Instructions

  1. In a medium-sized saucepan add the butter to melt on medium heat.
  2. Lower the heat to low.
  3. Whisk in the flour to make a roux, paste until smooth then add half and half.
  4. Slowly add the heavy cream, all the cheese, mustard, garlic, and Worcestershire sauce, and stir in a little beer to melt the cheese.
  5. After the cheese is melted and smooth, add more of the beer until it reaches good dipping consistency.
  6. If it's too thick for dipping add more half and half or cream.
  7. I keep this warm in a 3-quart slow cooker or pour it into individual small crocks covered with my assortment board of dipping finger foods.
  8. Note: This can be reheated the next day in the microwave for 30 seconds in a small dish.
  9. Serve with soft pretzel bites, dark rye or pumpernickel bread, and pieces of Irish soda bread triangles. beer bread, tortilla chips, or Irish pub steak fries.
  10. This melted cheese dip is perfect with my St. Patrick's Day Food Collection as a starter appetizer
