I love reinventing leftovers! This can be done with pork, ham slices and any kind of smoked sausage.
The kielbasa enhances the cabbage flavors.These are especially great to bring to a picnic outing. Everything is in the foil to heat up on the grill!

All you have to do is add wedges of cabbage, carrots and I like to fan my potatoes. I give many other suggestions below. You can chose your own combinations. I come up with whatever my leftovers are and pair them up with things I have on hand. Also kids find these lots of fun to get a surprise package!


Oil spray a large piece of aluminum foil.
Place the cabbage wedge on first.
A few carrots on the cabbage.
Add the leftover meat of choice , then place the potato on the foil.
Melt some butter. Pour evenly over the tops of everything.
Sprinkle with granulated garlic, Italian herb seasoning and salt, pepper to taste. If you have fresh herbs, basil, parsley or rosemary you can add that as well.
Fold up tightly.

Bake at 350 degrees until the cabbage is fork tender around 25 minutes.

Tip: when adding the vegetables if they weren't leftover, microwave them for just a few minutes to speed up the process. 

Other suggestions to add in combination: Leftover ham, steak, chicken, pork chops, cob corn cut in quarters, green beans, onions cut in half, broccoli, cauliflower, green pepper slices, zucchini, eggplant slices, whole plum tomatoes, cubed pineapple, whole mushrooms.

  I must warn you these are easy and so darn addicting! Make a double batch!

I love  these little bites made with peppers, pepperoni or hot capicola ham and of course loads of cheese!  Here is an easy appetizer that you can throw everything together in minutes for a tasty appetizer the gang will love! Great for any gathering and with any party you can make these ahead of time and freeze them! 
These are like having a mini bread calzone or meat pie all in one tasty little bite!

Pepperoni Provolone Bites Appetizer

1 cup provolone shredded (use any kind of shredded cheese you like that has a strong flavor)
1/2 teaspoon black pepper
2 1/2 cups flour
1 cup milk
1/2 cup butter cold cut into tiny pieces
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1 teaspoon granulated garlic or use fresh minced chopped garlic
1 teaspoon each Italian herbs fresh basil, parsley and dried oregano 
1/4 cup grated cheese

1/2 cup chopped meats of choice (pictured are pepperoni however see below for suggestions)
Note: you can add any chopped vegetables you want around 1/4 cup.

Optional: add chopped pepperoni, capicola ham or cooked sausage, crumbled bacon or prosciutto  ( around 1/2 cup.) Suggested vegetables 1/4 cup, chopped tomatoes, peppers, olives or mushrooms, shredded zucchini or eggplant. You can use sharp cheddar, mix blends of cheese or anything else you like.

Mix all the dry ingredients together. Cut in the butter and the grated plus shredded cheese with this dry mixture. Gently stir in the milk. Roll out. Place in mini muffin tins or drop by tablespoons. Sprinkle tops with more shredded cheese or grated cheese.    Bake in preheated oven 375 degrees  for 25 minutes.
Great with a side of marinara to dip them in!

Leftover Stew Mini Pot Pie Recipe

Let's face it, most leftovers are boring aren't they? Well they don't have to be. Here is a great way to use up leftover stew that everyone loves the second time around.

It's a whole meal in one little bite!
I am a big fan of pot pies but only homemade ones. This idea was a big hit with my family. Check out the slow cooker recipe at the end.

How cool would these be to take to work lunch or school? They taste great heated in microwave too!  I will warn you everyone will be jealous!!

Leftover Beef Stew, Leftover Chicken Stew       Leftover Vegetable Stew 

2 pre made store bought pie crusts or make  homemade 

Optional: egg yolk to brush on top

Spray cupcakes tins with oil cooking spray.
Line each cupcake tin with dough. Add the stew.

Top with more dough.
Bake at 400 until tops start to brown.

Slow Cooker Italian Pork Stew Recipe

6 boneless thick pork chops cut into small pieces around 3 pounds
4 cubed potatoes
3 zucchini cut
3 plum tomatoes cubed
1 cup peas
1 cup sliced or finger carrots
1 stalk celery
1 pound fresh mushrooms
1 pound green beans cut
1 can crushed tomatoes
2 sliced bell peppers
1 teaspoon each Italian seasoning, granulated garlic, salt, pepper
cayenne pepper is optional to taste
1 28 ounce can crushed tomatoes adding 1/2 cup Cabernet wine to the can to rinse out the rest

Dump everything into your slow cooker stirring to evenly coat. Slow cook on high 6 to 8 hours or low for 8 to 10 hours. 

Grilled Blueberry Muffins Recipe

It was actually at J. M. Fields in Riverside Mall years and years ago.  I absolutely loved blueberry muffins grilled the first time I had them. 

The buttery crunch on them were a fabulous treat. I actually forgot about them until today when I made them reminiscing. I still add a dab of butter on them after I grill them. One of my favorite weekend indulgences. I think it's time you tried a grilled blueberry muffin too!

In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles course looking sugar

beat in :
1 egg

1 3/4 cup cake flour
3 teaspoons of baking powder
a pinch of salt
1 cup of milk to wet the dry ingredients.
Fold in one cup mixed of fresh blueberries, red raspberries or strawberries and blackberries
Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes.

You will need:

Split the baked or store bought blueberry muffins in half. Butter it lightly on the split inside and place on a grill or griddle, butter side down. 
Note: You can also broil them on low if you like faced up.

Watch carefully as these will brown quickly.
Place on a plate, add a dab of butter and enjoy!

Baked Beer Chicken Legs and Thigh Recipe

A very tender, juicy way to make this baked beer chicken.

The chicken just falls off the bone it's so moist and tender. Plus with it's great flavor will make a great chicken salad with any leftovers! I never have enough chicken recipes but this one is a keeper and I make often because everyone loves it!

The beer is a terrific addition to hold in the moisture in the chicken. I usually serve the baked beer chicken with various sauces but it's delicious baked as it is. Easy to make and great to use in some many other ways if you have leftovers. Take it off the bone, add hot sauce or barbecue a whole other meal!

Baked Beer Chicken Legs and Thigh Recipe 

1 teaspoon smoked paprika
1 teaspoon dried oregano, basil, parsley
1 teaspoon each chili powder, salt, pepper
1/2 teaspoon cumin
1 teaspoon granulated garlic
3 tablespoons olive oil
1- 12 ounce can beer any kind
pinch of cayenne pepper

6 to 8 mixed pieces of chicken thigh, legs bone in

Preheat oven to 400 degrees.

Place the chicken in a large baking dish 13 x 9 deep pan. Rub with olive oil.

Pour half the beer in the bottom. 
Sprinkle with more or less herbs, all seasonings, salt, pepper evenly. Loosely cover with tin foil. Bake until juices run clear around 55 minutes depending on how thick the chicken pieces are.

Broil the chicken on high until the skin gets dark and crispy watching at all times, it just takes a few minutes. Flip the chicken to do both side.

This is great served with hot sauce, barbecue sauce or sweet and sour sauce. 

Asian Chicken Pineapple and Cauliflower Recipe

 If you love Asian style foods or have had Chicken and broccoli Asian style this one is totally amazing and over the top Asian Chicken Pineapple and Cauliflower Recipe!

A little sweetness with the pineapple, loving the green beans added to this and cauliflower. It just all comes together perfectly! 

Feel free to use broccoli if that's your preference but the cauliflower really rocks this dish! I really nice alternative. I also love the way the whole dish comes together with a lovely steamed rice!

Asian Chicken Pineapple and Cauliflower Recipe

1 can beef broth
3 cups steamed fresh cauliflower or broccoli
steamed green beans
1 cup fresh cut pineapple chunks
1 large bell pepper julienne cut 
3 boneless cubed chicken breasts
seasoned flour 1 cup in a zip lock bag with added
 (1 teaspoon each granulated garlic, salt, pepper, cayenne pepper and dried parsley)
1/2 cup soy sauce
1 cup sliced mushrooms
1/3 cup dark brown sugar
1 tablespoon canola or sesame oil if you have it

Optional: white or brown rice cooked to package instructions ( jasmine rice is wonderful also with this dish)

Shake chicken in seasoned flour.
Heat a frying pan with around 1/4 canola oil.
Once heated place chicken cubes in the oil and stir fry until golden brown on both side.
Add the peppers, mushrooms and pineapple.

Mix in a bowl beef broth, sugar, soy sauce, oil and garlic.

Place that sauce mixture over the chicken in the pan and toss with the beef broth mixture stirring evenly.

Cook on low cook until the chicken is fork tender when testing. Takes around 1/2 hour. Sauce will thicken add water if too thick.

In the meantime steam the beans and cauliflower.
 Cook the rice to package instructions.

Place the cooked rice in a baking dish, add the steamed vegetables to your dish then pour this sauce mixture over the top. 

Stuffed Pork Tenderloin Recipe

This is a very tender and delicious way to prepare pork tenderloin.

The pork melts in your mouth and it's wonderful to present at any family gathering or dinner party. Not only very impressive and easy to make, it's one that's asked for often.

Stuffed Pork Tenderloin Recipe

Pork tenderloin 2 to 3 pounds boneless
Italian bread crumbs
provolone slices or sharp cheddar
cream cheese
2 teaspoons minced garlic or more
olive oil
dried oregano
chopped fresh parsley
2 cups finely chopped apples 
Pinot Grigio
Thinly sliced hot ham capicola or finely sliced pepperoni 
Italian flavor bread crumbs
granulated garlic

Slice the pork lengthwise not cutting through leaving a pocket(mine was around 2 1/2 pounds. Open it up.  Pound it slightly to make it thinner if too thick. When you stuff this you can either cook it folded over or rolled up.
Add sliced provolone first, garlic, sprinkle with bread crumbs. Stuff with ham, apples, drizzle the entire length with olive oil.
More sliced cheeses. Add all the herbs and spices on top. More garlic if you like. Fold over or roll up and place in a greased baking dish to fit. Also you can place in a roasting bag. 
Pour around 1/2 cup white wine around the bottom of the pork loin. Drizzle with olive oil on top.  Salt and pepper to taste, sprinkle with granulated garlic and bread crumbs. Cover with foil for the first hour. Remove last 1/2 hour or remaining baking time. Add more wine if get dry.

Bake in preheated oven 350 degrees for around 1 1/2 hours depending on thickness pork should be fork tender.

Whole Wheat Blueberry Scone Recipe

I have been adapting older recipes and using whole wheat flour and less sugar. These whole wheat blueberry scones came out great unless you are a sugar fanatic but scones aren't sweet to begin with. These are tender and great with morning coffee or a cup a tea. I think as an afternoon snack they would awesome. 
They travel well if your on your way to work or a road trip. I made some topped with sugar and cinnamon and others totally plain. You pick your favorite fruits to top them during baking that you like. Any fruit you choose is awesome! Hope you like these whole wheat blueberry scones as much as we did!

Whole Wheat Blueberry Scone Recipe

2 cups whole wheat flour 
1 stick butter which equals half a cup
2 tablespoons sugar ( use stevia or splenda around 2 teaspoons for lower carbs)
1 egg yolk ( save egg white for brushing the tops)
3/4 cup buttermilk ( you can  substitute any milk or heavy cream with 1 tablespoons vinegar added let it sit 10 minutes)
2 teaspoons baking powder
1 teaspoon baking soda

Any fresh diced fruits or dried fruits can be used, (around 1/2 cup) for the tops.  I have used blueberry, raspberry, apricots, peaches, apples and mango. They all work out great!

Optional: sprinkle tops with granulated sugar and cinnamon after brushed with leftover egg white.

Place the dry ingredients in a bowl and add the butter using a pastry blender or fork to blend. Add the buttermilk and egg yolk until the dough is formed. Roll out cut into triangular wedges. ( I press in the fruit of choice on the top after I cut the wedges.) Brush with whites of egg. Sprinkle with sugar, cinnamon mixture if using.

Bake on preheated oven 375 degrees for around 25 minutes or until the edges start to brown.

Ham and Egg Cup Recipe Video

Ham and egg cups are amazing! Of course you can make toast if you like but if you're cutting carbs then omit the bread, that's the beauty of using ham on the bottom and filling it with eggs. I enjoy breakfast especially when it's easy, tasty and all in one bite is a bonus. 

You can place the ham on the bottom then fill with scrambled eggs also, if you like them better that way. I prefer the whole egg in the center.

Ham and Egg Cup Recipe Video

ham slices
eggs left whole or scrambled
provolone cheese
salt, pepper
cooking spray

Optional: add chopped onion, peppers, mushroom on top of the cheese before adding the egg

Spray a cupcake tin with cooking oil. Line a cupcake tin with ham.  Add a piece of folded provolone cheese on the ham. Crack an egg and place on top of the cheese. Sprinkle with salt and pepper. Bake at 350 until eggs are set around 12 to 15 minutes depending on how you like them.
